Weekend part two was equally as awesome as weekend part one. This was the first weekend in a very long time that hasn’t been devoted to studying, traveling or teaching a ridiculous number of classes and it was just perfect.
Since we went out on Friday night we stayed in and cooked on Saturday. We try to limit our eating out to once per weekend not only for budget reasons but also because we just enjoy cooking together and having a nice meal at home. Earth Fare had a ridiculous special on chicken last week where you could get boneless skinless breasts for $1 per pound. We took advantage of that and had grilled stuffed chicken for dinner last night.
We stuffed the chicken with fresh mozzarella, sauteed spinach, sauteed baby portobello mushrooms and basil. We rubbed the chicken with a little bit of our favorite Tuscan spice rub and then secured it with kitchen twine. Brandon grilled it and I finished it with a couple of spoonfuls of marinara. I made a delicious squash casserole (that earned a high five from Brandon after he had his first bite!) and orecchiette with parmesan and butter on the side.
After dinner as I was working on my playlist and class plan for my Sunday morning hot yoga class, I somehow managed to convince Brandon to commit to coming. I can’t say that he was super thrilled to be in the yoga studio this morning instead of on the couch with coffee in hand but the promise of these after class earned me some bonus points. 😉
Buttermilk pancakes using my favorite recipe. They were extra fluffy for some reason today. I mixed blueberries into mine and topped them with almond butter, Greek yogurt, sauteed bananas and a drizzle of maple syrup. Yum, yum, yum!
I had a session with a personal training client this afternoon and then headed back to the yoga studio to get my own practice in. It was perfect. It was one of those practices where every pose felt good and right. My hamstring is feeling so much better and I was even able to do bird of paradise on my left (injured) side for the first time in months and months. I didn’t want my practice to be over so I took frog during savasana (final rest). I can’t even tell you how nice it has been to be able to practice so much this weekend. I am a very happy yogi right now.
I refueled with a green smoothie after yoga. We spent the rest of the afternoon visiting with Brandon’s grandmother and grocery shopping.
Dinner tonight was super simple but so good. We rubbed cod fillets with Dizzy Pig Jamaican Firewalk and a little bit of Jamaican curry powder that we picked up on our trip and grilled the fish. We made fish sandwiches and had salad and leftover squash casserole on the side.
Must go figure out what I’m teaching for BodyPump in the morning and prepare for a new week. I’m going to be extra busy at work…focusing on the promise of a long weekend to come!
