A (Good) Long Day

Whew. Tuesdays nearly do me in. I’m barely holding my eyes open on the couch over here while we watch Bridesmaids and I still need to get some work done to prepare for tomorrow.

Although my day was busy, it was full of activities that I love so it’s all good.

Alarm was set for 4:30 a.m so that I could make it to the studio to practice ashtanga before teaching a 7 a.m. yoga class. I was at the studio by 5:20 and had a beautiful practice. Just can’t get enough yoga right now. Practice is feeling so good. I booked it downtown to teach my class and grabbed a coffee on my way in. The energy in the room today was incredible. I left so happy after having a great personal practice and class.

I whipped up a batch of pumpkin waffles for Brandon, Alaina and me when I arrived home from teaching. Fruit and soy-sausage on the side. And lots of fun toppings to choose from.

Caramelized bananas, nut butters, maple syrup, apple and pumpkin butter and greek yogurt. I went with sunflower seed butter, pumpkin butter, bananas, greek yogurt and a drizzle of maple syrup.

Part two of my day kicked off at 12:30 with another yoga class and yoga semi-private downtown and then power mixed at the studio.

I stopped on my way to the studio for a smoothie at Berrybrook Farm. I went with the “Mean Green” which had bananas, some other fruit and spirulina (which made it green). I sucked it down in about 5 minutes flat.

I ended my day back downtown at the Y to teach BodyPump. I was so excited to get to teach with Andre. We have been teaching the Thursday evening class together for a while now but got separated a few weeks ago when I switched with another instructor to cover Tuesdays. He was subbing tonight and we had so much fun! Love teaching with him! 🙂

Brandon got to pick dinner tonight and he chose chicken parmesan. Honestly, I wasn’t super excited about this dinner given that we just had pizza last night but chicken parm is always delicious. I skipped the noodles in favor of a large salad and lots of bread dipped in olive oil. Mmm…

I just ate a piece of vegan maple cake with pumpkin frosting and it was amazing. I am too lazy to edit more photos so I will tell you the story of how I acquired this delicious cake tomorrow!

What are your favorite waffle/pancake toppings?

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
