Playtime + Downtime

This weekend has been exactly what I needed it to be…relaxing. It’s been a nice mix of playtime time with friends versus downtime tackling “operation organize my life.”

On Friday night I met up with some friends for dinner at 131 Main. I was coerced into ordering a Poma-tini while we waited for a table and while it was delicious I had to pass half off to a friend because it was so sweet. I like to stick to dirty martinis when I have the urge to drink them!

Of course dinner involved red wine and interesting conversation along with great food. We shared the most amazing scallop appetizer. I could have eaten this as my entree and been the happiest girl in the restaurant.

My entree was cajun grilled trout and spaghetti squash. Although my fish was good had I known about the deliciousness of the scallop appetizer before ordering I seriously would have ordered it for dinner!

It was so nice to end my crazy work week with a fun dinner out with friends. I came home and passed out in preparation for early morning plans with another friend.

Kelly mentioned on Twitter Friday that it had been a while since we had a running date so we made plans to run Saturday morning. I ate a piece of peanut butter toast with honey and then headed off to do four hilly, chilly and rainy miles with Kelly. I didn’t mind the hills, cold or rain since I had such good company!

I squeezed in a quick yoga practice after our run and then went over to the Habitat for Humanity Re-Store to drop five bags of clothes off at the Goodwill truck and to get coffee and browse used books at Julia’s.

Julia’s is a coffee shop attached to the Re-Store and 100% of the proceeds benefit Habitat for Humanity. They have a large selection of very reasonably priced used books so I like to pick up a few while I’m there and then re-donate them when I finish. I got four new paperbacks for just $10!

I have had a weird craving for tempeh lately so I stopped by the store to pick some up on my way home. I made an open-faced sandwich with avocado, hummus, tempeh, spinach and white cheddar on Great Harvest Whole Grain Goodness. Blue corn chips and apple slices on the side.

It’s no secret that I have the biggest sweet tooth ever and I wanted to make something a little different yesterday. I decided to browse through Mama Pea’s recipes to see if I could make something marginally healthier to satisfy my sweet tooth. While these chocolate snowball cookies certainly aren’t “healthy,” they are insanely addictive. It’s a no-bake cookie featuring chocolate, peanut butter and oats. I won’t even tell you how many of these I have consumed over the last 24 hours. Warning…make at your own risk! I followed Mama Peas recipe with the exception of using butter instead of Earth Balance.

The rest of my day was spent purging the third bedroom of crap that doesn’t need to be there anymore. Stuff that’s moved with us over and over again and cluttered up the extra room in every house we’ve lived in. The hallway is lined with stuff that’s going to Goodwill or the dumpster and I couldn’t be happier. I abandoned my efforts around 4:30 to meet Sarah for a manicure/pedicure and wine. She’s leaving today for a 9-day European vacation. I am sooooo jealous!

I made a healthy dinner to counter act the cookies and afternoon wine. Quinoa cooked with kale and chickpeas and topped with Angela’s Low-Fat Vegan Cheese Sauce…except mine wasn’t vegan because I used regular milk.

Hope you’re having a great weekend. Anyone have fun Super Bowl plans? Back with a Sunday update later. Enjoy the day!

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
