My Perfect Thursday

Thursday was incredible. It was 75 degrees, breezy and the sun was shining and my day was full of things that I love to do.

After “sleeping in” until 7, I made overnight oats for breakfast. Quick oats, bananas, blueberries, apples, dried cranberries, chia seeds, plain Greek yogurt, almond milk and cinnamon. Topped with Almond butter and Crofter’s Superfruit Spread.

I spent the morning at Metro and had a few meetings. I was able to quickly run home around 1:30 for lunch. I made an open faced tempeh sandwich with honey mustard, spinach and a cheddar/gruyere blend. Apples, carrots and sweet potato tortilla chips on the side. I ate lunch outside for the first time in many months and it was so nice.

And then I got to practice yoga…in the sunshine! My client emailed and asked if we could find a place to practice outside for our session since it was so warm out. We met at the park and did an hour practice together. It was so awesome.

I came home after my yoga private and did some computer work and tackled a lot of laundry. Right before I had to leave to teach BodyPump, Sullie and I squeezed in a 2.5 mile run. Sorry, tried to get her to pose for the picture but she was having none of it. Clearly rolling in the leaves was better than getting her picture taken.

And then my day got EVEN better. I taught a fabulous BodyPump class with my favorite co-instructor, Andre, whose birthday is today. Happy Birthday Andre!!!!! (He reads the blog!) I always love teaching BodyPump but last nights class was just so much fun and I felt so strong. I think I could have gone up on all of my weights. It was such an incredible feeling. After class Andre and I were talking about how we almost get a “BodyPump high” during some classes. We’re nerds, I know! 😉

My final meal of the day was a quesadilla with the last of the beef stew that my parents sent home with me. I heated and shredded the beef and topped it with cheese, salsa and sour cream. A salad on the side with honey lime vinaigrette. I just whisked together lime juice, honey and olive oil.

Okay…the Friday to-do list is long. I’m heading over to Metro for some software training and then off to teach a yoga class. Enjoy the day!
