Happy Oscar evening! I am camped out on the couch watching the red carpet coverage. I’m pretty underwhelmed so far but then again I have only half been paying attention as I’ve been playing on the computer and cooking dinner. I haven’t seen many of the movies that are nominated this year so I’m not super into it. What people are wearing is more interesting! 😉
It has been such a beautiful weekend here in Charlotte. Although the 70-degree days of last week are gone, I’ve found the crisp and cool temperatures and abundant sunshine to be so energizing.
Early breakfast before teaching my Sunday morning hot class was plain Greek yogurt with honey, banana, a sprinkle of granola, chia seeds, dried cranberries and peanut butter. I really enjoy this protein-packed combination.
I went out for brunch after teaching with some of my yogis. I had an omelet with one egg, two egg whites, roasted red peppers, spinach, sun dried tomatoes and provolone cheese. Whole wheat toast and fruit on the side. Omelets in restaurants are always so huge so I usually do the egg white combo because I really love the veggie part too and want to eat the whole thing!
I had to get outside this afternoon to soak up the awesome day so I took Sullie for a three-mile run. I’ve quit wearing my Garmin while running in favor of just chilling out and enjoying myself. Besides, Sullie has slowed down a little now that she’s over 5 years old so we don’t worry about our pace! 😛
After our run I was able to practice yoga and took an amazing hot class. It was so what I needed and my body felt so good during and after. It was one of those practices that reminds me why I practice. I came home and had some hot tea and carrots and hummus as I did some cleaning.
Dinner tonight was quite a creation. I was looking for inspiration so that I didn’t just end up roasting sweet potatoes and cooking my collards from the farmer’s market. I found a recipe for curried lentils and sweet potatoes with swiss chard (I subbed collards) from Smitten Kitchen and decided to use it as a base using what I had on hand. I made quite a few changes to Deb’s recipe but it turned out so delicious and was packed with flavor. I adore curry and this is a great healthy vegetarian recipe that is full of protein thanks to the lentils. I served mine over brown rice with Greek yogurt and toasted almonds.
Off to relax and prep for a busy week that kicks off with 6 a.m. BodyPump tomorrow!
