Sometimes You Just Really Want A Burger

Good morning! Missed y’all yesterday but there was just no time to post. It seems like the homemade granola bar post was well-received and several of you reported already making a batch. Let me know how they turned out if you did!

My Tuesday started with the decision to ignore my alarm at 6 a.m. to go to yoga and sleep until 8. It was nice to sleep in and have coffee and breakfast at a relaxed pace but part of me really wished I would have practiced. Ultimately, I think my body needed the rest more so I got over it. I arrived at Metro around 9:15 and worked for a few hours before breaking for lunch.

I made an open faced tempeh sandwich for lunch but mixed up the toppings a little bit. I did honey mustard, spinach, tempeh, cherry tomatoes, banana peppers and pepper jack cheese on 9-grain bread. I really like banana peppers on sandwiches and I totally forgot that I even had them in the fridge. On the side I had Wholesome Goodness Sea Salt Multigrain Crisps (which taste a lot like Sun Chips but healthier), apple slices and carrots/red peppers/tomatoes.

After lunch I taught my weekly private yoga class to the crew from the Charlotte Hounds. It was especially fun because one of the players practiced with us. It was only his second time doing yoga but he was great!

I spent the rest of the afternoon at the club in meetings and teaching. I did manage to squeeze in a workout before my evening class. It is so warm here this week so I snuck out for a quick run and covered about 3.5 miles.

Our new Director of CrossFit started on Monday so we went out to dinner at Bad Daddy’s Burger Bar with the owners of the club after we all finished classes/work for the day. My intent heading into dinner was to get a black bean burger on top of a salad but once I arrived a burger and beer sounded better. I was really craving protein and not from a black bean burger so I ordered The Frenchie which is a turkey burger with brie and apples. I still got my veggies in with a side salad. Win, win! 😉

When I finally got home I was exhausted and couldn’t do any more work so the blog was put on hold in favor of hanging out with a pup who was equally as exhausted.

While I was working, Sullie was summiting Crowder’s Mountain! She was pretty worthless for the rest of the night.

I was up at the crack of dawn this morning to teach a 6:30 yoga class at Metro…but no one came. We just started offering yoga and so far the early morning classes haven’t really taken off. I worked for a bit before digging into overnight oats.

There is much to be done today…including motivating myself to workout. We just posted this video on the Metro YouTube channel of a CrossFit WOD from a couple of months back that I’m using as inspiration.

50 air squats
40 lunges
30 sit ups
20 push ups
10 burpees
20 pushups
30 sit ups
40 lunges
50 air squats

I’m going to make myself do this workout and sandwich it between a one-mile run before and after.

Have a good day! Be productive!

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
