Good Thing She’s So Cute

7-Day Green Smoothie Challenge, Day 4…annnnd another green smoothie breakfast. I might get crazy tomorrow and have oatmeal for breakfast and a smoothie for lunch or afternoon snack! 😉

True to my word, this was another new combination compliments of my freshly stocked freezer.

I picked up frozen pineapple, mango and peaches. Here’s what went in the blender today…

6 ice cubes, crushed
1 cup unsweetened almond milk
1/2 banana
1/4 cup frozen pineapple
1/4 cup frozen mango
A few peach slices
1 cup kale, stems removed
1 cup spinach

The best part about this smoothie is that it packed quite a punch of fruits and veggies but only came in around 200 calories. I usually aim for 400-500 calories for my breakfast so I added this.

A coconut banana muffin (I’m going to post the recipe soon – SO GOOD!). One half with sunflower seed butter and the other with Justin’s Maple Almond.

I ate the muffin at home and took the green smoothie to go. I drank it at my desk as I dove into emails for the day. (And yes, that is my work uniform…even for my new manager position. It’s amazing.)

I came home for lunch and enjoyed the leftover Greek couscous outside. I added in some leftover eggplant and topped it with hummus and Greek yogurt. I added some pita chips on the side for dipping. After lunch I couldn’t keep my hand out of the bag of Emily’s Hungrynola. It’s becoming a problem. I may finish two bags in one week!

I worked for a couple more hours and then set out for a run. It was beautiful in Charlotte today so I covered a little over 4 miles. After my run I booked it over to the Y to teach BodyPump. My legs were screaming during squats and lunges but the workout was great. I love that strength training burn.

Sullie says have a happy Friday! And good thing she is so cute because every single time I let her out she comes in covered in those pollen pods from the oak trees in the yard. I am brushing her multiple times a day and sweeping every time she comes in. Ahhh!!!
