Good morning! I hope that your Saturday is off to a wonderful start. I woke up early but rather than rush off to run or take a yoga class, I decided to take it easy on the couch with some coffee and breakfast. It’s rainy and gross out and it feels nice to start my day on a relaxed note since most of the time I feel like my life is one big rush to get somewhere.
On that note, I got home from dinner last night and decided to skip my Friday blog update. Watching Grey’s Anatomy with a bowl of ice cream sounded much more appealing! 🙂
So here’s everything I need to catch you up on from Friday…
Alright, let’s go ahead and get Day 5 of the 7-Day Green Smoothie Challenge out of the way first. I didn’t get too crazy with my Friday smoothie.
Banana
Frozen pineapple
Frozen mango
Frozen peaches
Strawberries
1 cup unsweetened almond milk
Squirt of agave
Cinnamon
Crushed ice cubes
Spinach
Despite the long ingredient list, it kind of tasted like nothing. I think I didn’t need the ice since I used all the frozen fruit. It kind of watered it down. I am determined to make delicious green smoothies for the final two days!
I drank the smoothie after attending a 6:30 a.m. hot vinyasa class and then made some oatmeal for a midmorning snack after teaching the 9:30 a.m. circuit/strength class at Metro. I used a packet of Wholesome Goodness Maple Brown Sugar with Pecans. I made it with water in the microwave at work and topped it with a little bit of creamy peanut butter. This was the first time I’ve used a packet of oatmeal in several years. While I prefer to make my own on the stovetop, this was a great snack to have at my desk. The oats had a great texture and I loved the pecan pieces.
I picked up lunch from Energy Cafe. It had been way too long since I had their carrot ginger soup. I did the combo and got a build your own salad, soup and peach black tea.
For my afternoon snack I ate more granola. One of my yoga students made me these little peanut butter granola clusters with nuts and chia seeds. The bag was full when she gave it to me on Wednesday and I’ve been chipping away at it since. I think I’ve set a record for granola consumed this week!
This is what happened on Friday night – sake and sushi at Sushi Guru! So, my favorite sushi restaurant in Charlotte was Cyros but they closed several months ago. Luckily, one of the chefs bought out one of the other owners and reopened as Sushi Guru. I have been dying to go for weeks andI am happy to report that the sushi is just as good, if not better.
Started with edamame because I just couldn’t wait for the sushi and needed something so snack on.
Look how beautiful! Here’s what we’re working with from left to right…
Extremely Spicy Tuna Roll – tuna, cucumber, radish sprouts, spicy sauce and we added avocado. My favorite thing about this roll is that the tuna wasn’t chopped up like it usually is in spicy tuna rolls. Rather, it was in one big delicious piece. They weren’t kidding about the extremely spicy part…I think they used straight Sriracha in the roll.
Wasabi Roll – shrimp, crab and cucumber topped with ground wasabi peas, wasabi tobiko and drizzled with wasabi aoili.
Guru’s Roll – tuna, lumb crab and avocado drizzled with spicy aioli, flash baked and topped with fried garlic and shallots. This is what I came for (they used to serve this roll at Cyros) and it was just as delicious as I remembered. There was a huge piece of tuna in the center that was melt in your mouth good.
Sushi is one of my favorite things to go out for because I cannot make it at home. Is anyone else like that? If you live in the Charlotte area, you must try Sushi Guru ASAP!
I’m not sure what made me decide this was a good idea after a sushi feast but there is always room for ice cream!
