Early Mornings

I have crossed the line into full-out “go mode.” Most people would say that I’m in go mode all of the time due to my seeming inability to slow down and propensity to take on as much as possible. I know that I’ve entered a special state of craziness when I start doing things like skipping my favorite yoga classes in favor of quietly sitting on the couch with coffee so that I can have some downtime. Or just flat out sleeping through them.

I was up at 5:45 this morning. Instead of making my way to my yoga mat, I made my way onto the couch where I have been snuggled under a blanket and drinking coffee for the past hour and a half and catching up on work, blog stuff and the Internet in general. I’ve always been a fan of the early morning hours as they are usually the most productive for me. I can focus and not get distracted. When I was in college I always set my alarm super early on test days to study.

Morning oatmeal (more pumpkin) was done by 6:45. One downside to getting up so early is that I wake up starving and can’t wait until 8 or 9 to eat. I predict I’ll be ready for lunch by 10:30.

I haven’t been able to practice all week. I am hoping to make it to a lunch class, god willing that my day isn’t too insane. Instead of yoga, I’ve been lifting a lot this week – CrossFit and BodyPump. My muscles and mind are definitely in need of some yoga. I kind of hurt all over.

I promised an update picture on the new space and here it is. Walls are painted and flooring is going in today. Equipment will begin to arrive next week. We’re getting so close.

Some random meals to share with you…I’ve been craving salads this week but putting a twist on them by adding grains. Yesterday’s lunch salad featured spinach, mixed greens, leftover Trader Joe’s Harvest Grains Mix, leftover sweet chili tofu, leftover roasted asparagus, avocado (yes, still making my way through my gigantic supply), pecans, goat cheese and roasted beets. I picked up beets at the farmer’s market and roasted them. I’ve loved having them on hand for salads and snacking.

I needed an easy dinner last night so I went open-faced. Mashed avocado and honey mustard with sautéed spinach, tempeh, tomato and manchego cheese. I haven’t had tempeh in over a month and this hit the spot.

I wish I was here. Where do you wish you were?
