A Loss Of Enthusiasm

Happy, happy Friday! I hope it’s been a great week.

Remember how I was all excited about my kipping pullups yesterday? I felt all on top of the CrossFit world that I’d finally figured them out. Well, my enthusiasm for CrossFit waned a bit after last night’s workout.

This WOD killed me for some reason. I was the very last one to finish. Usually I can rock running/endurance WODs (and I have a weird love for burpees) but I was so slow last night. In my defense, our gym is on the second floor so every time we went out to run 400 meters it included a flight of stairs. When I came off the stairs and tried to do the broad jumps, my quads were screaming and refused to let me travel more than a couple of feet. I was more like broad hopping…which resulted in more burpees. Oh well, you win some, you lose some…literally in this case. I’m pretty sure I had the slowest time overall for BOTH locations.

I may have sucked up the workout but I did manage to come home and whip up an awesome dinner.

Whole wheat couscous with sautéed zucchini, eggplant, tomatoes and olives along with sautéed chicken seasoned with lemon pepper and dredged in flour. Ready in 15 minutes. Here’s how it happened. Open fridge, take stock, pull out veggies and chicken. Open pantry, take stock, pull out couscous. Put couscous on to cook, pound chicken, season chicken, chop veggies. Put veggies on to sautee, put chicken on to sautee. Fluff couscous, mix veggies in, plate, sprinkle with feta and serve.

Breakfast this morning was overnight oats and coffee. I am so sad to see the Mighty Maple go.

Lunch was courtesy of last night’s leftovers. Spinach and broccoli slaw topped with the couscous. Avocado, feta, hummus and Greek yogurt over that. I love these “leftover bowl” lunches.

And I’m off to get a haircut. Sadly, my stylist doesn’t have time for color until August but I’m going to talk to him about my inspiration today. I’m a little nervous!
