Saturday Stuff + Trader Joe’s Haul

Some people in this house are having very productive Saturdays…early yoga, errands, grocery shopping, house cleaning and major reorganization.

And then there are others who prefer to spend Saturday lying down and watching others work. I’m slightly jealous. 😉 (Side note, I just had to re-educate myself on lay v. lie. :oops:)

Let’s back up a bit. A couple meals to share with you.

Friday lunch was a salad topped with a Trader Joe’s Masala Burger that I found in the depths of the freezer. I haven’t had one in months and forgot how good they are. I like that they’re kind of spicy.

I had dinner last night with some girlfriends. We are starting a new monthly themed dinner group. Our first dinner was all things Mexican and we feasted on chips, salsa, guacamole, margaritas and then chicken, black beans and salad. I topped my chicken and black beans with a heaping spoonful of salsa and guacamole. One of my friends brought Paleo pumpkin balls and sweet potato brownies for dessert. I didn’t take a picture but they were pretty amazing. I especially loved the sweet potato brownies.

This has been my go-to breakfast this week. 2% Greek yogurt (love that Whole Foods is carrying Atlanta Fresh) with pumpkin mixed in. Then I swirl some apple butter in with that and top it with cinnamon and pumpkin pie spice. I finish the yogurt off with with bananas, apples, granola and sunflower seed or peanut butter.

I have been shopping at Whole Foods since it opened but I did a big Trader Joe’s trip today because they carry some staples that I like to keep on hand. From left to right…grape tomatoes, apricot jam, bananas, sour cream, baby portobellos, olive oil, pumpkin butter (what I really went for!), pumpkin puree, feta, red pepper, baby spinach, spring mix, broccoli, eggs, acorn squash, vegetable broth, soft baked gluten-free snickerdoodles (impulse buy and OMG they are so good!), gluten-free frozen waffles, black bean and corn enchiladas and chicken burgers.

I also got a pumpkin for the front steps and a fall bouquet for the kitchen table. Tomorrow I’m going to pick up some mums!

All that shopping made me hungry! I was in the mood for eggs so I made an omelet with sauteed mushrooms and peppers, sundried tomatoes, spinach and cheese. Topped it off with avocado.

After an afternoon of cleaning, organizing and moving things around, I am happy to be on the couch with the Georgia game on and dinner in the oven. I just painted my toes red so they better win!
