Yay!

Happy Friday! I’m so excited!

I’m at the airport on the way to go visit my mom in Florida this weekend. My dad is in Georgia so we’re going to have some girl time! I bought her a yoga mat and she’ll soon learn that we’re going to have a yoga private lesson every day while I’m there. She’s struggled with some back pain recently and I think yoga could help her feel better and strengthen her core/spine.

Speaking of yoga, I started my day with an early hot vinyasa class so I could get a practice in before I leave for 5 days. It was sweaty and perfect. I’m sure that my co-workers love when I show up at the gym looking like this. Luckily, we have showers. 🙂

I knocked out a few things that needed to be done before I left and then came home for breakfast and to finish packing. Plain 2% Greek yogurt, TJs pumpkin butter swirled in, apples, bananas, granola, cinnamon and peanut butter.

I know this doesn’t look that great but last night’s dinner was seriously amazing. I sauteed grape tomatoes and mushrooms, steamed some broccoli and then mixed it into Annie’s Organic Shells and White Cheddar. I included a sprinkle of nutritional yeast and some extra shredded mozzarella. Then I added salmon seasoned with TJs lemon pepper grinder for protein and couldn’t believe how good everything tasted together. Now that’s how you doctor up boxed mac and cheese!

My flight is boarding and I’ve got some great in-flight reading material. I haven’t shared this yet but I’m attending the CrossFit Level 1 Trainer Course next weekend. I have to get my Level 1 for work. I can’t complain about having the opportunity to add another certification to my repertoire but I’m very nervous about the course. I’m not exactly “die-hard” CrossFit but at least I kind of know what to expect from the two-day course since I did CrossFit Endurance earlier this year.

The training guide is 115 pages long and I will be tested on the material. I have heard the test is actually really hard so I can’t wait to read all about CrossFit for the next few days…at least I’ll be on the beach!
