Like Christmas Morning

It was like Christmas morning for me when I woke up!

It’s new roof day!!! You know you’ve really become a full-fledged, responsible, home-owning adult when things like a new roof excite you this much. The roof on the house is over 20-years old and has tons of damage. I was even starting to get a leak in the bathroom. Luckily, my homeowners insurance is covering the new roof but I do have a hefty deductible and I’m upgrading from standard shingles to architectural (resell value!) and also having the roof vented. The crazy thing is that the roof should be done later this afternoon. These guys work so quickly – it’s so impressive.

Get prepared for lots of home talk coming up soon. I have projects galore in the works.

Another thing I’m excited about? Autumnal Mix. I tried really hard to talk myself out of it in the store yesterday but I ended up compromising with, “What’s Halloween without one bag of candy corn?” One and done. Those little sugary pumpkins are just too good to pass up.

Monday was a crazy, crazy day at work (as Mondays in the fitness industry usually are) so I ate lunch at my desk. I made a big leftovers bowl from the previous night’s dinner. I layered spinach, apple, cranberry and walnut quinoa, roasted acorn squash, tofu and feta and then drizzled it all with a balsamic vinaigrette.

Luckily, I had dinner waiting in the slow cooker when I finally arrived home at 7:45. First batch of chili of the season! I used my dad’s basic recipe – ground beef, tomatoes, kidney beans + additional veggies and spices. It was so good and I am so excited about the leftovers.

I was up early today to prep for the roofers so I made a batch of pumpkin molasses muffins with a streusel topping.

And enjoyed one alongside scrambled eggs and sliced banana for breakfast. I have eaten eggs the past two mornings in a row for breakfast. Nice to mix things up sometimes.

Okay, I’m off! I have quite the to do list today. I’ve already taught class and trained a client this morning. I have two more classes to teach later this evening and I also need to knock out payroll and lots of e-mails. Ready, set, go!
