The Final Countdown

I am so happy to be in a vertical position blogging in bed right now. I was a busy bee today trying to make all the final preparations for my trip tomorrow. I’ve always found it challenging to get things in a good place at work before I leave for vacations. I want for things to go as smoothly as possible and for no one to have to stress over me being gone. I had so much stuff to finalize and e-mails to get out. And on top of working there was also a 6:30 a.m. yoga class because I knew it was the only time I could fit it in, eyebrow waxing, a quick Lululemon trip, training a couple of clients, mani/pedi, drug store, grocery store, laundry, cleaning and packing. Such a tough life, I know. 😉

Breakfast after yoga was a green smoothie with spinach, almond milk, protein powder, mangos, berries, banana and agave.

Lunch was an egg scramble concocted from whatever I could find left in the fridge (which was a common theme for today’s meals…wait until you see dinner). Smoked salmon, sundried tomatoes, spinach, roasted asparagus, goat cheese and eggs.

Dinner was kind of a pasta dish without the pasta (because I didn’t have any in the pantry not because I was trying to be noodle-free). Sauteed eggplant, mushrooms and chicken italian sausage with spinach, tomato sauce and lots of cheese. Random but good.

Packing consumed my evening. It was so exciting to get out all my summer stuff and pack a suitcase full of bright colors.

For the nails I went with turquoise and coral. The turquoise is reading really blue in the photo but it’s actually a lot paler and more aqua than blue. I got the gel polish on my nails for the first time. I’m a little nervous about it and the health of my nails but I couldn’t pass on the no chipping feature while traveling and spending my days doing yoga and in the sand and salt water on the beach.

Has anyone ever done the gel nails? It’s crazy that they’re dry when you leave the salon. Love that! Any long-term damage to your nails?

My eyes are literally closing as I type. Early wake-up call. This time tomorrow I will be in the Dominican Republic! 🙂

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
