Lunch bowls have continued. This one was a bit sad and used the last of whatever was left in my fridge. Brown rice, white beans, kalamata olives, diced tomatoes, avocado, smoked salmon and Greek yogurt. I officially have no fresh food after the fruit I ate with breakfast and the last of the veggies here. Must get to the store soon.
Check out what I came across in Bon Appetit as I was eating my lunch…a recipe for a bean and rice bowl with avocado much like some of the bowls I blogged about last week. See, I’m not totally crazy in my love for throw it in a bowl and call it a meal.
Look what I made! I went two whole weeks without eating sweets/processed carbs but last weekend I finally needed a little something. I whipped up these flourless peanut butter cookies but subbed honey for the sugar so that they stayed relatively “clean.” The honey changed the texture significantly and I had to chill the dough prior to baking so that it firmed up a bit but these are great little treats. Very gooey in the center and peanut butter-y.
Flourless Peanut Butter and Honey Cookies
– 1 cup peanut butter
– 1/2 cup honey
– 1 teaspoon vanilla
– 1 egg
– Chocolate chips (optional)
– Sea salt (for finishing)
Mix everything together. Chill dough for about 30 minutes. Drop onto a baking sheet lined with parchment and lightly press down with a fork in a criss cross pattern. Sprinkle with sea salt. Bake for about 8-10 minutes.
