Final preparations for my Chicago weekend are underway. Mainly focused on freaking out about what to pack.

We knew the weather would be dicey with an early May trip so I’m not surprised that this is the forecast…I just have no clue what to pack. Everyone tells me it’s still appropriate to wear boots in the midwest in May. It just feels so weird and wrong to my southern soul.

I’ve decided I just don’t care. The trip will be fun regardless of whether I’m wearing boots, sweaters and rocking frizzy hair or not. I am just excited to get away from Charlotte and be with my friends. I’ll just bundle up for our lakefront run! 🙂

Workouts lately have been just okay.

Monday: Run 3.5 + Strength Circuit
Tuesday: The CrossFit workout pictured above…I got 11 rounds RX and I was happy with that. I’ve come a LONG way with my pull ups!
Wednesday: Hot Vinyasa Yoga
Thursday: 3 miles with the pup

Recent eats have been good. I’ve been all about the sandwiches this week. Yesterday’s lunch was a cup of tomato and veggie soup with half of a portobello sandwich with feta and sundried tomato hummus on whole wheat. I love this sandwich!

Dinner Tuesday and lunch today was a turkey sandwich on sourdough with avocado, tomato, sprouts and muenster. I have to comment on the mango that I cut up on the side…I think it was the sweetest and most delicious mango that I have ever had!

I roasted whatever I had left in the fridge for dinner tonight.

Barbecue tofu, sweet potatoes, zucchini and spinach salad. I loved this dinner! I have tried to cut back on the amount of processed soy in my diet so it’s been quite a while since I’ve prepared tofu at home. Loved it as my main protein tonight!
