Memorial Day Weekend “Staycation”

Three-day Memorial Day weekend was a huge success. I ate good food, relaxed by the pool, spent time with friends, did yardwork, QT with Sullie, taught and took yoga, CrossFitted and more. Now you know why I haven’t been around to update all weekend! I figured y’all were out having fun too so here’s an end of weekend check-in.

Friday night dinner was a burrito bowl with black beans, rice, ground turkey in taco seasoning, tomatoes, avocado, plain Greek yogurt and salsa.

Sullie and I enjoyed absolutely beautiful weather here in Charlotte and spent as much time outside as possible. On Saturday morning I ran and then took a yoga class from one of my favorite teachers who just happened to be subbing and then met a friend for lunch. We sat outside and caught up for an hour and a half! It had been a while!

I subbed out my Saturday lunch yoga class so that I could enjoy the day but I subbed for a friend at 5:15. Class was awesome! I was in a great mood thanks to a relaxed day. I came straight from the pool to teach yoga. I showed up at the studio in my bathing suit!

Saturday night dinner was pizza at Wolfgang Puck Pizza Bar. I had the house-made lamb sausage pizza with goat cheese and eggplant. I love the fluffy crust with the big air bubbles. Pizza always hits the spot!

It’s so right to have ice cream when you eat pizza. I couldn’t resist a stop by Whole Foods for cookies and cream gelato after dinner. I had been craving ice cream all week and this did the trick.

I taught yoga on Sunday morning and then met a friend for coffee. When I got home I whipped up a quick brunch of sauteed spinach, mushrooms and tomatoes topped with two eggs and goat cheese. I had sliced avocado and strawberries on the side.

Brunch was followed by a crazy streak of productivity…I cleaned out the cabinet under the sink where I keep all my cleaning supplies, cleaned the kitchen, did two loads of laundry, vacuumed the whole house, mopped the kitchen and bathroom floors and ran three miles. Then I went to the pool!

After pooltime I showered and went to Vivace for a yoga party to celebrate the new teacher trainee’s graduation. Seasonal salad with mixed greens, tangerine, cheese, pistachios and white balsamic vinaigrette.

And seared sea scallop risotto. Vivace always has this dish but it changes seasonally. It’s one of my favorite food combinations of all time so I always order it. This one featured saffron risotto, grilled asparagus, watermelon radish and arugula. It was beautiful!

This morning I went to Metro to do the Memorial Day Hero WOD. We did the Lumberjack 20.

Yeah, that’s a lot. I finished in a little over 32 minutes and was the last to finish. It was tough and my body was like “no thank you” to CrossFit at 9 a.m. this morning.

Post-CrossFit recovery included a smoothie with strawberries, banana, mango, peaches, almond milk and protein powder.

I was crazy productive again today. After CrossFit I got my car washed and then went to Home Depot where I bought flowers and herbs. I spent almost FOUR hours in my backyard this afternoon cleaning the patio, clearing out beds, bagging leaves, planting things, etc. I am bug bitten and covered in dirt right now but it felt good to get it all done!

Now I’m off to watch Hangover 3. I am so ready to shower and sit down! 🙂
