Tuesday Burger Day

Hi! I come to you after a long day involving teaching and taking on fire hot yoga, lots of desk work at Metro, 80 squats in tonight’s CrossFit class and a disastrous but delicious dinner.

Let’s start at the beginning.

Breakfast was overnight oats with Greek yogurt, rolled oats, chia seeds, cinnamon, apple, banana, apple butter and peanut butter. Still not feeling it. Choked it down. Don’t know what happened with me and overnight oats.

Then I taught and took a yoga class at Y2. It is really tough to teach and then take. Spending upwards of three hours in that hot room at one time is draining. I still managed to have a great practice.

I loved my lunch today. It was the best salad I’ve had in months. I started with a bed of spinach and then added a wheat berry salad with cashews, dried cranberries, dried pineapple and yogurt covered raisins and then added pine nuts, goat cheese, hearts of palm and some salmon to that. RIDICULOUS!

After spending a long afternoon at my desk doing payroll, sending out eblasts, catching up, etc., I decided that I needed to move around a bit so I planned on doing the strength portion of our CrossFit class.

4 x 7 front squats/13 back squats

The math on that is 80 squats total. I am going to to sore tomorrow.

And of course I couldn’t stop at just the strength and ended up doing the WOD.

15 Push Press (I did the prescribed 65#)
10 Toes to Bar (Was NOT in the mood so I did V-Ups instead)

I think I finished in 8-something? I wasn’t really paying attention. The 65# push press were heavy for me and I thought about stripping the weight and going to 55 but I’m glad I hung in there.

Post CrossFit recovery included opening a bottle of my most favorite value cab. Seriously, this is a nationally distributed wine and it is the best cab you can get for under $10. If you have a Total Wine in your area they have a deal worked out with Columbia Crest and offer this much cheaper than any other store. I pay $7.99. It tastes like a $20 bottle of wine.

I planned on burgers for dinner tonight before I even knew that today was National Burger Day. Because let’s get real…I can never plan around these kind of food holidays in advance. I don’t even celebrate national peanut butter day over here!

Dinner prep was a complete disaster. First, I turned on the wrong eye and melted a plastic cutting board into a burner. Then I grabbed the handle of a hot skillet that was straight out of the oven with my bare hand. And then I sliced into my palm with a serrated knife.

BUT…dinner was delicious so it was all worth it. Local grass-fed ground beef (swear it just tastes better) seasoned with Dizzy Pig’s Raising the Steaks and a hefty dose of sea salt and topped with goat brie. Served on a ciabatta bun with ketchup and super spicy/horseradish-y honey mustard.

Anyone else clumsy in the kitchen? I could go on for paragraphs about all of my kitchen disasters. Never did claim to be very coordinated! 😉
