Sharing a little of this, little of that today…everything from smoothies to soup to yoga (always yoga) to The Office.
I had my first non-smoothie breakfast in 6 days today.
Breakfast after coaching 6 and 7 a.m. CrossFit was a Chobani Pineapple topped with bananas, blueberries, Bare Naked Fruit & Nut Granola and Earth Balance Coconut Peanut Butter.
Roasted cauliflower is ridiculously amazing.
Well, roasting is a pretty amazing way to cook anything. Lately, I’ve been loving butternut squash as a “starch” that’s not really a starch. And I picked up this cauliflower from a farmer at the market Saturday. Need more cauliflower in my life!
Last night’s dinner was chicken cordon bleu, roasted butternut squash with sea salt, cinnamon and chili powder, roasted cauliflower with sea salt and lemon pepper and a quick cole slaw I threw together with shredded cabbage and carrots, light mayo, sour cream, dijon and spicy honey mustard.
Despite the fact that it’s 85 degrees outside, I’ve been craving soup for lunch.
I’ve had soup for lunch every day this week. Chicken, potato and poblano on Monday, lentil and chard on Tuesday and black bean today. I seem to be getting on some serious food-specific kicks lately. Does anyone else do this?
And the thing I’m most excited to share with you…after almost a year and a half of dedication, I have finally built a solid yoga program at Metro!
I added several yoga classes to the schedule when I started managing Metro. I went for months where I was lucky to have 1-2 people in my class. Often it was zero. I was ecstatic when I had 3-4. Over the last couple of months, the yoga program has finally been thriving. I consistently average 6-8 and it’s an awesome group who have committed to their practices. They’re begging for more now! I know that may not sound like a crazy number but the fact that I have been able to get even 10 people to commit to a regular weekly practice makes me so grateful. It’s been really cool to see their practices grow on a weekly basis and some of them even come to my classes at the studio now too for even more!
Last night I had my biggest yoga class ever at Metro…9 people! I was bursting with pride and happiness.
