Hello.

I have been absent. And I can’t promise this trend won’t continue. I’m not sure that I can commit to posting every day right now. There are other things in the works.

For example…a little website project. More details to come very, very soon. I’m overflowing with excitement at levels I haven’t felt in quite some time.

My July 4 holiday started with sleeping in until 8 followed by yoga, more yoga and then six  hours on the couch working on personal goals.

I came home after yoga and made an amazing lunch salad featuring mixed greens, avocado, pecans, goat cheese, dried cranberries and broiled wild Alaskan salmon.

I highly recommend broiling as a cooking method for thicker fish fillets such as salmon and mahi. My general method is to preheat the broiler to high, arrange a rack in the top third of the oven, season the fish generously with olive oil, salt, pepper and the spice rub of my choice and then broil it for about 7-10 minutes depending on the thickness of the fish. You’ll want to watch it pretty carefully.

While I was working, Sullie was all play. Apparently, it’s more fun when you play on both of your birthday toys at the same time. 😉

Once I finally peeled myself off of the couch at 7 p.m. I headed over to a friends condo to watch fireworks from the 35th floor. You cannot complain about these views.

I made dinner out of copious amounts of hummus, pita chips, cheese and wine in the company of my favorite people.

I am particularly proud of this photo I took of thunderstorms in the distance. The weather in Charlotte has been CRAZY lately with so much rain. Usually this time of year the norm is temps in the high 90s but instead we’ve had rain and low 80s for weeks. It’s bizarre.
