Saturday Market

It’s a rare Saturday in Charlotte for me. I have no plans and a whole day to do whatever I want! No work, no social engagements…nothing! I did find out at the eleventh hour last night that I was needed to sub a yoga class this morning so I started my Saturday bright and early with 50 hard-working yogis who powered through 90 minutes of super hot and sweaty flow.

First order of business after teaching was a  shower, cold smoothie and coffee before heading out to the Charlotte Regional Farmers Market. I haven’t been to the market in months due to work obligations so I was thrilled to get there this morning. It was the best market I’ve been to in a really long time.

I loved my haul today…peaches, eggplant, several varieties of tomatoes, squash, zucchini, blueberries, corn, sourdough bread, watermelon and a pound of North Carolina sea bass (fish tacos are on the menu for Sunday night!).

8.3lunch

I tomato sandwich was a must for lunch today. I used one of the Cherokee purple tomatoes and the sourdough bread that I purchased to make a killer sandwich. I made a herb mayo using basil and parsley that I’ve been growing and gave the tomatoes a nice dose of salt. Blue Diamond Nut Thins and  spinach salad with feta, strawberries, almonds and aged balsamic and olive oil on the side.

Sullie is also enjoying our relaxed day and has been sunbathing and napping away. Why is she so cute!?
