Comfort Food In The Cold

Good morning! I hope y’all are having a great week so far. How is it already Wednesday? It’s flying by! We had one of those crazy turns in weather yesterday where it was 60 degrees at 10 a.m. but the wind picked up and the temperature dropped quickly. It was 40 and dark by 4 p.m. and it started raining with snow mixed in a couple hours later. From what I’ve seen on Instagram it seems like several of you are getting some snow. Crazy! I did this “Run from the Snow” chipper workout yesterday at the gym before I coached CrossFit and taught yoga. It was just what I needed to get moving after a long, cold day.

Catching up on the meal front…

It may be winter weather but I’m still craving smoothies a few times a week. I made an interesting concoction yesterday that actually tasted great.

Banana
Beet greens
Plain Unsalted Roasted Almonds
Dates
Frozen Pineapple
Frozen Mango
Coconut Milk
Greek Yogurt
Ice
Honey

I have been loving this lunch. Raw kale, quinoa, chicken, golden beets, avocado, goat cheese and a drizzle of balsamic. It’s full of really healthy, really nutritious foods and leaves me feeling satisfied all afternoon. I’ve never really been a raw kale kind of girl but it’s working for me in small doses here. It definitely has a kick to it! I picked up a bunch of golden beets on sale at Whole Foods on Saturday and roasted them up (thus the reason for the beet greens in my smoothie…hate to waste any part of it) and they are SO sweet and delicious.

Repeated the bowl again yesterday with salmon instead of chicken and drizzled with basil infused olive oil and balsamic.

Cold weather means comfort food and I’ve been craving it for dinner. On Monday night I made a meatloaf with ground turkey breast.

And served it with mashed sweet potatoes and mixed greens.

And after snow flurries last night, all I wanted was a bowl of soup and a grilled cheese. The sandwich was extra special because I made it on sourdough (my fave) with brie, a spanish cheese, a spread of apricot preserves and lots of butter in a cast iron skillet. There was NOTHING I wanted more for dinner last night than a grilled cheese.

I’m on a deadline for a potential project that I’m super excited about so it’s time for focus and productivity. Have a good day!
