Hi and happy Tuesday! I have had a lot on my mind lately which I think is standard for this time of year. We are moving into the holidays, it’s the season of love, thanks and gratitude and 2013 is winding down. I haven’t been sleeping especially well and there’s been a lot of tossing and turning at night. This is part bad in that sleep is important but part good because it’s been really creative tossing and turning and I keep having all of these thoughts and ideas.
The week is off to a good start. It was 75 degrees and sunny on Monday (although of course it’s 50 today…weird southern winter weather), the Panthers beat the Patriots in Monday night football, I did my first CrossFit workout in forever and received some really fun pants in the mail.
Dinner when I got home from Asheville Sunday was leftover salad…mixed greens topped with leftover roasted tofu, squash and brussels sprouts, dried cranberries, pumpkin seeds and goat cheese with homemade balsamic vinaigrette. (Yes, will post recipe as soon as I test and write out proportions…I always eye ball it!) Cheese and crackers on the side.
I keep telling myself it’s going to be green smoothies for breakfast this week but I’m craving oatmeal instead. Loved this bowl with sauteed pears, cranberries and lots of chia seeds.
Missed the smoothie greens but got them in at lunch with this beautiful salad from Reid’s. Lots of good toppings including pine nuts, avocado, tomato, feta, artichokes and salmon.
Public service announcement! If you have not made Ina Garten’s Lemon Chicken yet you are missing out! I have blogged about it several times and I’ve made it twice in the last seven days. I never repeat recipes like that. This chicken is that good and that easy. You don’t even have to pre-sear the chicken before baking it!
It’s perfectly tender and juicy every time and the balance of lemon and garlic is perfect. You get a great pan sauce that you can drizzle over the finished chicken and also whatever you’re cooking it with.
Now, if my yellow pants weren’t enough for you the fun continues with these fabulous leggings that the lovely ladies at Rebecca Michaels sent to me. I opened the package last night and could not wait to wear them to teach this morning. Actually, I haven’t taken them off all day! I love them so much!
The leggings are so soft and comfortable. I have made everyone today that comments on them touch them to feel how soft they are. Another bonus, they are not see through (we did a test in the sunlight! :)). They’re such a nice change from basic black leggings and definitely make you stand out a bit! My yogis loved them and said they couldn’t wait to read about them on my blog.
