The Week in Food and Fitness

Hi there! Hope y’all are staying warm.  It has been such a wonderful weekend. I have a ton to catch you up on so I’m just going to start with a general food and fitness recap. Then I have all kinds of fun posts coming in the next couple days! It has been such a wonderful weekend.

THE FOOD

Breakfast & Brunch

12.8oatmeal

Banana oatmeal with sunflower seed butter and cranberry sauce.

Maple bacon scones at brunch at Nolen Kitchen this morning. I posted these on Instagram and someone commented, “can you imagine if they added cheddar in there.” THEY DID! These scones were over the top.

And Nolen’s breakfast pita. It’s one of my favorite brunch items in Charlotte. It’s a warm, soft pita with scrambled eggs, oven roasted tomatoes, spinach, big hunks of feta and a cucumber yogurt sauce.

Lunch

Butternut squash soup and salad with mixed greens, beets, pears, goat cheese, avocado and pumpkin seeds. Love pears on salad!

Turkey sandwich on Whole Foods Prairie Bread with cranberry sauce, monterey jack and mixed greens. Another bowl of butternut squash soup and some pear slices.

Soup and salad, round two. This time carrot ginger soup and salad with leftover tofu and lots of other stuff. I so crave soup during the winter!

Dinner

Sriracha lime salmon over spaghetti squash with a side salad topped with an Asian vinaigrette.

I am so obsessed with this salmon. It’s so easy and insanely good. I “mmm” all the way through it.

The only other “dinner” I have to share right now is a wine night with yoga friends where we shared this meat and cheese board.

Treats

A little stop at TCBY on Friday night given that it was 77 degrees here on Friday. (It is now 35 and raining…crazy south!) They had a chocolate mint flavor that made my cup of yogurt!

THE FITNESS

Monday
Yoga by the pool before leaving Zoetry. It was a beautiful, sweaty, self-led practice.

Tuesday
1 mile warm up run on treadmill + CrossFit

3 Rounds for Time
– 7 power cleans
– 7 front squats
-15 push ups
– 15 pull ups
– 30 kettlebell swings

This WOD was brutal and left me sore for three days. It took me a lot longer than I thought it would. Over 20 minutes.

Wednesday
20 minute treadmill run with 10 minutes run and 10 minutes sprint intervals + 60 minute hot vinyasa yoga class

Thursday
CrossFit + 50 GHD sit ups . I wasn’t feeling the WOD that was programmed for Metro because I was still kind of sore in my shoulders from Tuesday. I wanted to do some posterior chain work so I wanted to base my workout on heavy deadlifts. I wanted to row instead of run because I’ve been doing so much treadmill running lately.

So enter the CrossFit benchmark WOD “Diane.”

3 Rounds for Time
– Row 500 meters
– 12 bodyweight deadlifts
– 21 box jumps

This workout REALLY challenged me. I have only been able to do bodyweight deadlifts in workouts in the last couple months. It’s a big milestone for me. I took them pretty slow to focus on form and technique. I really pushed myself on the row. My body felt like jello after this one. Loved it. Took me right at 20 minutes which is slow for this benchmark but I wanted to be careful with the deadlifts.

Friday
3 mile run just to get my body loose and moving. It felt so good!

Saturday

Sunday
90 minute hot yoga class
