Grilled Cheese, Gnocchi & Green Smoothies

First things first, thanks for the comments on my Monday post. It feels really good to know that I can open up and write from the heart and be supported in that. It’s even better when you tell me it resonates with you and that it even helps out in any small way. I am really lucky to have this space to share.

If you though my post topics for the week have been all over the board, wait until you see what I’ve been eating! It’s been a strange week of eats. As I talked about in my stress and the stomach post, my digestion is the first thing to get crazy when life gets crazy. So I’ve been all about the intuitive eating this week and letting myself have whatever I feel like I need…which is a strange mix between juices, smoothies and soups and all the cheesy, carby, comfort food I can get my hands on! 😛

Breakfast

Banana oatmeal in a peanut butter jar and tea. I’ve been all about tea in the morning this week. I haven’t had coffee once. Ever since the juice cleanse I have cut back on coffee so much. When I have it now it’s usually later in the morning or early afternoon and just one cup.

Green, green, green smoothie! I seriously tried to see how much spinach I could get into it (at least 2 cups, thank you Vitamix!). I think I did a pretty good job getting this thing ultra-green and I couldn’t taste the spinach (swear!). This mix was banana, frozen peaches, frozen mango, protein powder, almond butter, ice and almond coconut milk. Yummy.

Lunch

Black-eyed pea and collard green soup at Whole Foods with a side of vegan cornbread and kombucha. The soup was just okay. It was really salty and made me thirsty for the rest of the day. I heated up the cornbread a bit though and it was awesome.

Quinoa lunch bowl! It’s been forever since I made one of these. I cooked some quinoa in chicken broth and then served it on a bed of spinach with cherry tomatoes, avocado, goat cheese, plain greek yogurt, hummus and a drizzle of basil olive oil and red wine vinegar. Yum.

Snack

I picked up this Evolution Harvest bar at Starbucks a couple of days ago. It was my first time trying this brand and I really liked it so I wanted to share since I’ve seen them in Starbucks and Whole Foods. It was packed with nuts and fruit.

Dinner

Roasted cauliflower, baked tofu and roasted acorn squash.

Grilled cheese with gruyere, mozzarella and white cheddar with spinach and pepper jelly on sourdough. Be still my heart…so good.

1.14gnocchi

Tapas with a friend last night. We split mussels and this awesome gnocchi dish. Seriously, this was inane. Gnocchi in a parmesan cream sauce with brussels sprouts, mortadella (a type of Italian sausage) and pistachio pesto.

To wrap it all up.

My sweet girl loves to prop her chin on any and everything. Last night it was the couch as she was begging for attention and she fell asleep like this.
