Week of Eats + A Must-Have Nail Color

I am happy that you all enjoyed the Yogi Clothing giveaway post and yesterday’s video blog. I especially appreciate the support on the ideal weight chat. It’s great to hear others in agreement. I’ll try to do the video blog thing at least once a month and let y’all endure my southern drawl. 😉

Lots to recap from the week as far as food and life so let’s get to it!

Breakfast

1.18smoothie

I have been boring with breakfast this week. Green smoothie every morning despite temps in the 20s. It’s just all I want!

Lunch

1.17wf

Box of good stuff from Whole Foods…kale, spinach, hardboiled egg, edamame, pecans, dried cranberries, roasted butternut squash and a drizzle of three different dressings!

1.18lunch

Soup and sandwich. This sandwich is my fave…turkey, muenster, arugula, tomato, avocado and tarragon mayo on pressed sourdough.

Dinner

1.18chickendinner

Stuffed chicken breasts and roasted brussels sprouts. Newsflash: I am thisclose to being over brussels sprouts for the season.

1.16crab

Crab cake salad at a get together with friends.

1.16tuna

And also tuna tartare with fried goat cheese and roasted golden beets. This was crazy delicious. Fried goat cheese = always a good idea.

1.18steakdinner

And finally, Friday night filet dinner. I kept it simple and seasoned the steak with salt, pepper, and Dizzy Pig’s Raising the Steaks and seared it in a cast iron skillet. On the side was steamed green beans, herb roasted potatoes and roasted baby carrots. Since the anemia thing I have been trying to eat red meat once every week or two.

Life

1.18nails

I got a polish change today and love this combo that my nail gal and I put together. I was gravitating towards blue today and she recommended this cobalt shade and then we added in the glitter nail at the very end. Great last minute call!

1.18polish

Highly recommend this color. She described it perfectly by saying it’s bright and dark at the same time.

1.18sullie

Guess who got a bath this week? I can’t stand how cute she is when she’s wet. On a related note, I found a soft lump on her belly last night and I am freaking out. I have an appointment to see the vet first thing Monday. I’m praying it’s just a fat deposit. Please send us good energy!

Enjoy the weekend!

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Reading, Watching, Listening (Spring 2026 Edition)

Happy weekend! Another week in the books! I got three runs in (6.5 miles, 5.5 miles, 5.5 miles) and I have a trail run planned for tomorrow. Total weekly mileage will end up around 30-35 miles depending on if I go for 13 or 17 tomorrow! I’m 16 weeks out from the Golden Ultra so [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
