Happy Tuesday! This morning I trained a client, worked out, taught yoga and practiced yoga. I have my first photo shoot for my book in a couple of hours. Many of you have asked for more details on the book…it’s about core training, specifically planks, and will be photography heavy with written descriptions of all of the exercises and will also include 10 complete core workouts. My hope is that it will be a resource for a wide audience…home workouters (I made that word up), gym enthusiasts, trainers, group fitness instructors, etc. It won’t release until April 2015 but you’re hearing so much about it now because all of my materials are due in the next couple of months. We are starting photography today and I am nervous but excited!
Time to catch you up on what I’ve been eating lately. I have so much to catch up on and blog about in general. The creative juices are definitely flowing lately. I think it’s this spring air and sunshine! 🙂
Breakfast
This was actually Sunday brunch…whole wheat sourdough with light mayo, avocado, applewood smoked bacon and an egg. This was really, really good. I need more bacon in my life.
I joked on Instagram that I had crossed over to the green smoothie dark side. I got a little crazy with this one…kale, peaches, mango, kiwi, avocado, almond milk, liquid egg whites and apple. It actually tasted great. The avocado makes the smoothie creamy and the egg whites make it fluffy. It also satisfied me for quite a while. The Vitamix was key in getting a smooth blend in with this crazy mix. Everything was perfectly pureed.
Lunch
I had the BEST lunch before leaving Geneva last Friday. We ended up at Bien Trucha thanks to a reader recommendation on Instagram (Y’all…I’m SO in love with Instagram lately. It’s definitely my favorite social media site of the moment. I like how visual it is and all the interaction that takes place between people.) The food was wonderful. So fresh and flavorful. We shared these home fries with cilantro-serrano aioli as well as grilled corn with epazote-butter, lemon-aioli, queso cotija and chile piquin.
Pork belly tacos with salsa verde, cucumber and queso fresco.
Tuna tacos with celery aioli, arugula and avocado.
So grateful for an awesome local recommendation. I loved the town of Geneva. It was cute and had great shops and restaurants.
And here’s a much less exciting lunch at home. Simple sandwich and salad.
Dinner
Shredded brussels sprouts cooked with diced applewood bacon, honey-dijon marinated chicken and roasted baby carrots.
This is a sad dinner. I was full speed ahead making Thai green curry until I discovered that I didn’t have a can of coconut milk in the pantry. I converted it into a stir fry instead using Trader Joe’s Island Soyaki Sauce. Not the same but got the job done. In general, I’m not really into stir fries.
Dinner at a friend’s house. Salad, mashed cauliflower with truffle oil and a chicken kabob. It’s nice to eat grilled food again thanks to our weather!
