Recent Eats: Photo Shoot Week Edition

Welcome to recent eats, photo shoot week edition. Let me sum it up for you…it was NOT EXCITING. Lots of juicing, smoothies, soup, protein and veggies. Not a carb to be seen until we wrapped on Friday (scroll down for the Friday night celebration carb fest). Y’all know I am all about eat all foods in moderation but when you’re spending the week being photographed for a core training book in a sports bra and tight pants, a little clean eating is in order…especially when you’ve just arrived home from 9 days in Mexico full of guacamole and margaritas. Although the timing wasn’t exactly desirable, at least I had a tan for the shoot! 😉

Breakfast

Smoothies or juice every day with a side of dandelion tea, which is good for digestion.

Annnddd that’s all I’ve got for breakfast. Like I said, super exciting.

Lunch

Lots of salads and smoothies. I had a lunch meeting on Thursday at Crisp. I love their build your own salads. Spinach, chick peas, hard boiled egg, dried cranberries, pears, blue cheese and walnuts with honey mustard vinaigrette.

Dinner

Dinners were still delicious this week but just more low-carb focused. I loved this beef short rib over spaghetti squash with roasted asparagus. I got the short rib on a crazy good deal at the farmers market last week. I cooked it long and slow with red wine, onions and garlic. So good.

Chicken cacciatore with sauteed baby bok choy and roasted cauliflower. I picked up these chicken leg/thigh quarters at the farmers market. This is easily one of the simplest and best chicken dishes that I have made in a very long time. Cooking with bone-in chicken v. boneless/skinless adds flavor like no other.

We wrapped photography at 5:30 p.m. on Friday. I immediately drove to the store and picked up wine and all the ingredients for homemade pizza.

My combo was wheat dough with hot chicken italian sausage, artichokes and sundried tomatoes with lots of cheese. Kale and spinach salad on the side.

I LOVE FRIDAY PIZZA NIGHT!

My Cascadian Farm Protein bars were a life saver for my afternoon shoots. I ate one every day during the shoot.

What’s more fun than protein bars? Cupcakes. I was very pleased to received a delivery of assorted chocolate cupcakes on Friday night! 🙂
