A Rainy Day Workout + Some Eats

Hi and happy weekend to ya. It was another week full of teaching and training over here so I’m very much enjoying some downtime at home with Finn on this Saturday. We were going to head to the NC Zoo today but weather + a Pokemon community day conflict made me postpone that to another weekend.

I got Finn back on Wednesday and we spent the afternoon with Terra where I got fresh color and Finn got a trim while I processed.

I was actually trying to make an appointment for next week and Terra asked if there was any chance I could come that afternoon because her schedule opened up unexpectedly. It ended up being a great rainy afternoon activity – especially since Finn got cleaned up too! 🙂

It rained ALL DAY on Thursday so we took an afternoon excursion to the gym after preschool. We both needed to get out of the house. Finn did his tablet while I did 20 minutes on the assault tread – 10 minute easy jog and then 10 minutes of 30 seconds work, 30 seconds rest.

Once it was time to lift, Finn helped out. Let me tell you, an extra 40 pounds on your TRX row certainly makes things more challenging.

Here’s what went down…

SET ONE x3

10 bench press, worked up to 80#
10 Bulgarian split squats holding 20 pound dumbbells
10 kneeling single arm rows, 25#
15 dumbbell front squats with the 20# dumbbells

SET TWO x3

10 barbell deadlifts, 105#
10 TRX rows (I did a bent knee variation that’s hard to describe but I like because it’s more bicep-y)
15 kettlebell hip thrusts, 45#
10 plank up downs (walking from high plank to forearm plank)

Finn’s at such a great age to tag along for lots of activities – and we can usually make a fun time out of it! He’s going out Pokemon-ing with his dad this afternoon and very bummed that I’m going to the gym without him, haha. 🙂

Before I hit the gym, I have some meals to share from the last couple of weeks.

BREAKFAST

I got nothing for you! It’s been a salted caramel Perfect Bar (if I’m on the go) or smoothies (if I’m at home) every day. I did have this smoothie combo this morning and it was really good.

LUNCH

Been craving sandwiches lately and had to bring back this favorite combo. Nature’s Own honey wheat bread, Duke’s Mayo, avocado, Boar’s Head turkey, muenster cheese, bread and butter pickles and Mayomust spread.

Another classic sandwich – peanut butter, honey and banana on honey wheat with Cheez-Its – Finn and I cannot stop with the Cheez-Its…we go through a box a week. Also, here’s my bracelet bundle.

Romaine, chopped chicken breast, carrots, tomatoes, queso fresco, avocado and ranch.

Toasted sourdough with butter and mashed avocado and topped with kimchi and cottage cheese scrambled eggs. This was an awesome combo. Mango on the side.

This is a delicious vegan grain/greens bowl. Here’s what’s in the bowl!

  • Baby spinach
  • Quinoa
  • Kimchi
  • Crumbled roasted seaweed snacks (definitely try this!)
  • Roasted butternut squash
  • Avocado
  • Pepitas
  • Lemon tahini dressing – tahini, lemon juice, coconut aminos, maple syrup, olive oil, salt, pepper and water

DINNER

This was my second time recreating this dinner combo – it’s sooooo tasty! Air fried tofu seasoned with Dizzy Pig Bombay Curry-ish rub, a sautéed veggie mix from Trader Joe’s, steamed basmati rice cooked in coconut oil, Trader Joe’s yellow curry sauce, chopped peanuts and cilantro.

Quinoa, sautéed spinach, air fried chicken breasts seasoned with Dizzy Pig Wonder Bird rub, avocado, shredded cheese, hummus and ALDI spinach tzatziki.

Trader Joe's multigrain blend

Trader Joe’s Multigrain Blend topped with queso fresco, sautéed spinach, sautéed chicken Italian sausage, avocado, hummus and tzatziki.

Trader Joe's gluten-free chicken nuggets

Crispy chicken salad with air fried TJ’s gluten-free chicken nuggets, chopped romaine, carrots, celery, corn, queso fresco, cilantro, buttermilk ranch and TJ’s cilantro dressing.

Trader Joe's frozen fried rice

Trader Joe’s frozen vegetable fried rice – add sautéed ground chicken, a scrambled egg, coconut aminos and sriracha.

s'mores girl scout cookies

OMG this flavor of Girl Scout Cookies. Kicking myself that I only got one of them. They are HEAVENLY! I received one tip on Instagram to microwave them for a few seconds. Another person said to refrigerate them.

Okay…time to finally leave my house for the first time today now that it’s 3p and I have a window to get a workout in. I’ll be back with more from the weekend later!
