Hi everyone! Hope you’re having a great day! As I mentioned in yesterday’s post, I have a lot going on this week with deadlines and projects on top of doing more personal training. This week has been full of early mornings and today I had to break down and take a 45 minute nap after three back to back training sessions that started at 5:30 a.m. I am a bad napper but I’m trying to embrace them more given that the nature of the industry that I’m in means I train/teach early mornings and evenings.

The 45 minute nap was pretty glorious. Here’s what I’ve been fueling my body with to power through the week!

Breakfast

Surrrrrppppriseee! I just can’t get off the green smoothie kick. It’s the only thing that I want in the morning. I wake up craving it!

One day I did get a little crazy and add a peanut butter and banana waffle on the side.

Lunch

This week’s favorite salad combo is so springy and delicious! Mixed greens, avocado, strawberries, blueberries, dried cranberries, macadamia nuts and goat cheese topped with a homemade honey balsamic. I got a bag of macadamia nuts from Trader Joe’s last week and they’ve been a great change for salads and snacking.

This was a desperation lunch that turned out to be pretty tasty on a day that the fridge was bare. You’re looking at about how many spinach leaves I had left for a salad so I made a broccoli slaw instead. I heated a Hilary’s Eat Well veggie burger from the freezer and topped it with sriracha aioli, goat cheese and avocado. The broccoli slaw was a mix of dried cranberries, avocado, pecans and some plain greek yogurt.

And Panera “You Pick Two” with Lemon Orzo soup and a Cobb salad. There is a Panera in the same shopping center as the yoga studio so it’s become a more frequent stop for me. They have really enhanced their offerings lately and I’ve been impressed with most of what I’ve tried. I was pleased that the Cobb was full of avocado and chicken. They also do not overdress their salads, which is really nice.

Dinner

I enjoyed these scallops at the teacher training graduation party. They were served with some type of “cauliflower panzanella” that was not my favorite thing ever. Way too much parsley…but the scallops themselves were delicious.

I also had this gnocchi with goat cheese, basil, ‘njuda, spinach and olives. Oh how I LOVE gnocchi. Almost as much as perfectly seared sea scallops.

I made this dinner at home. Balsamic portobello mushroom with this really awesome honey balsamic chicken and roasted asparagus. This was my first time making the chicken recipe and it was simple and so good. A great way to spice up a plain chicken breast. I’ll share soon!

I have also been working to perfect my homemade pad thai recipe. Cannot wait to share with you very soon. It’s pretty amazing!

Finally, I ate this gigantic spinach, grilled chicken, bacon, tomato, blue cheese and cashew salad while I was out with friends last night…and may I dare to say…no salad for me today. I officially need a salad break. Off to find a sandwich for lunch! 🙂 🙂 🙂
