Memorial Day Weekend part two was nowhere near as eventful as part one. I spent most of the latter half of the weekend in front of the computer wrapping up this little project…

It turns out that my editor and I were kind of on separate thought trains about the direction of this book so after a call on Wednesday I had to rethink and reengineer where I was going with it. I’m pleased with how it turned out but I had to crank through the weekend to get it done. I stayed up until 2:30 a.m. on Sunday working on it. I NEVER write that late but I was on such a focused productive streak. I finished the proposal Monday afternoon and then sent it to my best proofreader for review (my mom!). She helped me tighten up a few things and off it goes. Fingers crossed. We’ll see where this one goes!

I think this mimosa that I drank on Sunday afternoon by the pool helped with my focus later that evening! 😉

x-men-3-movie

And talk about random…I also found time to see the new X-Men movie and I basically had no idea what was going on for the duration of the movie. Especially in the end. I have never been a big X-Men fan in the past (I don’t think I’ve ever seen a movie) so it was lost on me.

Let’s skip to recent eats…

Breakfast

Smoothies but WEAK ones. I ran out of all of my favorite frozen fruit like mango, pineapples and peaches and was stuck with raspberries and blueberries. My smoothies have been berrylicious but not my favorite.

Brunch at Terrace Cafe. I had this crazy quiche with roasted red peppers, pepper jack cheese, caramelized onions and steak. It was pretty good. I don’t think I’ve ever had steak in a quiche before.

Lunch

Same old, same old!

This salad was special because the greens and tomatoes were from the farmers market. First of the season! They were so flavorful and delicious. Some of my dad’s homemade sourdough with butter on the side.

Dinner

Roasted asparagus, baked meyer lemon salmon and sauteed squash. This dinner wins for most uncolorful dish of the week. My dad always teases me for my affinity for a colorful plate. The white asparagus paired with the squash is doing me no favors here.

I decided to get out of my box a little and do an Indian spiced dish with Indian spiced cauliflower and tofu, roasted eggplant and a creamy cucumber yogurt sauce. So good. Although I may be OFF cauliflower for a while after having one of those vivid dreams that I had cauliflower growing in the top shelf of my cabinet. (WTF!?)

Cannot wait to cut into this bad boy! Watermelon is one of my favorite things about summer!
