A Surprise Weekend Visitor

Happy weekend everyone! I was absolutely thrilled to learn that I was getting a surprise weekend visitor from Florida!

My mom!!! She booked a last minute flight to spend my birthday weekend with me (it’s Monday) and I’m SO happy to have her here! She hasn’t visited Charlotte since I bought my house almost 5 years ago!!! I took her to the farmers market with me today after I taught my AM yoga classes at OM to stock up on some summer stuff. We got a cantaloupe, tomatoes, kale, blackberries, zucchini, squash, cucumbers, beets, honey whole wheat bread and flowers.

While we were there we enjoyed some delicious empanadas. I had Nutella and banana (to DIE for) and my mom had veggie. It was a nice little pre-lunch snack.

Since we didn’t get home from the airport last night until nearly 8 p.m., I planned to cook dinner at home. I made balsamic glazed bone-in pork chops with caramelized shallots over goat cheese mashed cauliflower with green beans. It was my mom’s first time trying mashed cauliflower and she approved. I heard her telling my dad about it and commenting how he had to try making it so I take that as a stamp of approval!

After the farmers market this morning we made tomato sandwiches for lunch at home and then got ready to go out to do some house shopping stuff. I wore this fun new elephant dress for the first time with my Erin McDermott Lucky Elephant Necklace. So matchy matchy. And how cute is my background star?

Afternoon house activities were fun! I’m doing a little kitchen facelift and replacing my countertops with granite, putting in an under mount sink, having the cabinets repainted, changing the hardware and repainting the whole kitchen. I am so freaking excited! I spend so much time in the kitchen and this upgrade is long overdue. Now, if someone could just help me pick out granite. So overwhelming! I am leaning towards a shade of gray with gray cabinets and light walls. I need to get busy on Pinterest! And if anyone has a gray granite or quartz that they absolutely love, give me some recommendations!

We’re relaxing at home for a bit before evening massages and a casual dinner. What a nice day and so happy to have my mom with me! 🙂

Have a great weekend!

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

I recently traveled to Big Bear Lake, California for the inaugural Big Bear Peaks + Pines three-day stage race hosted by TransRockies Running. This was my third TransRockies event in 12 months (see also Colorado + Moab) and I’m here to tell you that they can do no wrong when it comes to race organization [...]

Happy weekend! Another week in the books! I got three runs in (6.5 miles, 5.5 miles, 5.5 miles) and I have a trail run planned for tomorrow. Total weekly mileage will end up around 30-35 miles depending on if I go for 13 or 17 tomorrow! I’m 16 weeks out from the Golden Ultra so [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
