Beach eats have been nothing but good! I have been fed so many delicious things here…

The first night we had grilled flank steak, asparagus, salad, roasted potatoes and quiche. What a feast!

Another dinner was pasta with sauteed shrimp and scallops with salad and green beans. These sea scallops were  so good.

We went out for dinner one evening and were greeted with a big basket of hush puppies. I’m pretty sure this restaurant gets its customers and good reviews with these hush puppies. That’s all anyone talked about when we read the Yelp reviews.

For dinner I ordered crab cakes and a salad. The crab cakes were loaded with crab and not a lot of filler.

We stopped for dessert after dinner at Calabash Creamery. I would like to say that it was for the kids…but I was equally as excited about my waffle cone. 🙂 🙂 🙂 I went with a combo of praline pecan and strawberry.

Tonight’s dinner was a team effort. I worked with my friend’s daughter and her friend to make a taco feast.

We did a buffet of fish, ground beef, mahi in a lime/garlic/cilantro mix marinade, homemade guacamole, homemade white sauce, cheese, shredded cabbage, cilantro and Mexican quinoa.

My plate with fish tacos and Mexican quinoa. It was the best dinner ever after a day of paddle boarding, beaching and intercoastal floating.

I’ve been served beautiful omelets ever morning for breakfast and lunches have been basics and eaten on the beach. One day PB&J and another day PB&B. Tastes so good with plain kettle chips. Side note, why do chips and PB&J taste SO good at the beach?

What’s your favorite beach or vacation food? I have to go with room service baskets of warm croissants and coffee when I’m at a resort and old school sandwiches on the beach when I’m staying at a beach house/condo.

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Happy weekend! Another week in the books! I got three runs in (6.5 miles, 5.5 miles, 5.5 miles) and I have a trail run planned for tomorrow. Total weekly mileage will end up around 30-35 miles depending on if I go for 13 or 17 tomorrow! I’m 16 weeks out from the Golden Ultra so [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
