Weekend: All Is Calm, All is Bright

My weekend was…really good. I took three (much needed) days off of teaching and focused on chilling out (slept 10+ hours Saturday night…yes, yes and yes), spending time with people I care about and working on my book. I’m 15 days away from my deadline, 15,000+ words in and there many more still to be written. It’s a labor of love.

The best kale salad I have ever had! Believe it or not, it was a Publix recipe. All you need is sweet potatoes, olive oil, salt and the Publix Sweet Kale Salad Kit. Here’s the recipe. It was AMAZING!
