Hi! This week is totally nuts but really amazing at the same time.

As much as I hoped it was allergies, I’m pretty certain I have a cold. The worst part is that it has been going since Friday and presents itself with different symptoms every day ranging from a stuffy nose to nausea to coughing but luckily it’s not a knock you out kind of cold and I’ve been able to work through it. I am really a-okay. I hate to complain about being sick. I feel grateful that I can still do my day-to-day stuff for the most part. I’ve skipped a few workouts and cancelled a few clients in favor of rest but nothing crazy.

On a work and personal front, I feel really challenged and connected. I am so grateful for abundant work opportunities (that I’m excited about) right now. I have also had several meetings with other women this week that have left me in total girl power mode. I’m forming partnerships, creating new relationships, planning workshops, etc. It’s so good!

A few pictures of what my week has looked like so far…

3.24breakfast

Green LUMI juice + black coffee + workshop planning with my BFF = the best start to the day.

zoeygirl

Zoey had a session with her trainer today and we worked on not jumping on the counter (girl loves to counter surf!), here command, stays and heal/walking on the leash. She’s doing so well!

3.25girlsdinner

On Tuesday night I had the best girl’s group ever. One of my friends is launching a new website and had a few ladies over to bounce ideas off of and give feedback. In return, she cooked us the best food ever!

butternut brush

This butternut squash and caramelized onion bruschchetta was the best thing ever!

3.25falafel

And these mini-falafels were incredible! We wrapped up the evening with homemade peanut butter cookies, mint chocolate chip cupcakes and a whole lot of talk about women in business, asking for what you want and being recognized for the work you do. I had never met half the women in attendance but I’m fairly certain we’ll now be lifelong friends. It was a good night.

roastedveggiesbertollie

And here at home, this week I have been OBSESSED with huge pans of roasted veggies. Bertolli sent me their new line of olive oil sprays to test out and I have been using them non-stop since receiving them. Instead of just roasting one or two things I have been combining all of my weekly shopping purchases. My favorite combo has been carrots, parsnips, brussels sprouts, turnips and sweet potatoes. Roast at 400 for 30-40 minutes, shaking the pan/stirring a few times while it’s cooking, and then enjoy! Tip…it’s even more delicious with a sprinkle of cheese during the end of cooking. (What isn’t better with melted cheese?)

Time to shut down (the computer and my body).

What is your favorite roasted veggie combo?

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Big Bear Peaks + Pines Race Recap (3-Day Stage Race, My First 50k)

I recently traveled to Big Bear Lake, California for the inaugural Big Bear Peaks + Pines three-day stage race hosted by TransRockies Running. This was my third TransRockies event in 12 months (see also Colorado + Moab) and I’m here to tell you that they can do no wrong when it comes to race organization [...]

Happy weekend! Another week in the books! I got three runs in (6.5 miles, 5.5 miles, 5.5 miles) and I have a trail run planned for tomorrow. Total weekly mileage will end up around 30-35 miles depending on if I go for 13 or 17 tomorrow! I’m 16 weeks out from the Golden Ultra so [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
