Hi. And where do I even begin to thank you for the incredible support you showed on my last post? It was amazing and touching to hear from every single one of you that commented via Facebook, Instagram, email or on the post. I will respond to all of the comments because each one was so special to me. I truly feel like a weight has been lifted off of my shoulders. Thank you for being so receptive, respectful and loving.

This week has flow by. I feel like I blinked and it’s already Thursday. Here are a few scenes from my week.

4.1zoeysullie

First, the sisters were reunited today and they are too freaking cute for words. This is their “intensely focused on a ball” face. I love Zoey’s posture in this one. She had her eye on the prize!

banana oatmeal

I’ve still been all about banana and egg white oatmeal for breakfast. I have had a few smoothies too but I keep coming back to the oatmeal.

lumi beet juice

I’ve also been working my way through my sample of Lumi juices. One of my favorite things about them is that they are not only organic but shelf stable and most of my juices were good until mid-April. Yay! This morning I had the Belmont Beet and it was really good. 10 ounces, 55 calories, 10 grams of sugar and a mix of beet, celery, orange, carrot, cucumber and lemon.

4.1steak

I have been cooking every night despite long days. It’s my favorite way to unwind although we don’t end up eating most nights until after 9 p.m. Sunday was steak marsala, sauteed kale sprouts and roasted herb and garlic potatoes.

chicken and vegetables peanut sauce

Monday was chicken braised in a mixture of Trader Joe’s Spicy Peanut Vinaigrette and coconut milk with roasted veggies on the side.

salmon dinner

And Tuesday night was my favorite easy lemon parmesan salmon with pureed cauliflower and green peas. I have such a soft spot for peas. They are delicious!

And finally…I was watching The Walking Dead tonight (I just can’t stop) and they were listening to a CD labeled “Running CD.” This brought me back to the days when I used to run with a handheld Sony Discman Sport (with shock protection!). Can you believe how far we’ve come!? I seriously remember making CDs, strapping this thing on my hand and going running. I actually still have a few big books of CDs that I’m just too nostalgic to throw away. I read recently that Starbucks is going to quit selling CDs. It’s the end of an era, for sure! (Let’s not even talk about the Boyz II Men and Whitney Houston TAPES I had when I was really young!)

Beet juice…yes or no?

Did you ever run with a handheld CD player?

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
