Monday is always a crazy but fun start to the week for me. I train clients at 5:30 and 6:30 a.m. and then head to the studio to teach at 8:15 a.m. and usually take the class after to get my practice out of the way while I’m already sweaty. I shower and head back to the gym to train another client at 11 a.m. and then have a weekly yoga studio management team working meeting all afternoon and then wrap up my day by teaching one more class at 5:45 p.m.

Early mornings are always a little hectic as I have to pack my bag with at least three outfit changes, breakfast and my computer. I really need to get better about day before prep!

My Mondays are definitely a good snapshot of what a day in the life is like in the fitness and yoga world.

But enough work talk, let’s get to weekend play. Even though I teach on Saturday and Sunday mornings, I still try to make time for weekend stuff like friends, food and outings.

This pizza kind of changed my life on Friday night. We randomly ended up at 300 East for dinner. I hadn’t eaten there in years. Once I read the description of this pizza, I couldn’t even consider anything else. Butternut squash, bacon, caramelized onions, onion jam and dressed greens. It was AMAZING! We polished off the whole thing. Charlotte peeps…RUN to 300 East before they take this off the menu!

We had a couple of friends over on Saturday night and I loved prepping food for it. I enjoy entertaining and don’t do it enough. This was homemade pita chips with baba ghanoush (eggplant dip).

Cheese plate…because you can never go wrong with cheese. Side note…if your local store sells these raisin nut crackers, buy them! Harris Teeter has a store brand of them as does Trader Joe’s.

Big soft ginger cookies. I also made a salad with lentils, sweet potatoes, beets and more but I’ll be sharing that recipe later this week.

Zoey helped me clean my green smoothie cup on Sunday morning. I laughed at her green nose. This girl seriously loves fruits and veggies more than anything!

Sunday brunch was leftover salad, an over medium egg, avocado and a big bowl of fruit.

I wrapped up a Sunday full of yoga (teaching, taking, teacher meeting) with a really basic but delicious meal. Baked chicken quarters, roasted potatoes and carrots and green peas.

And now I’m off to teach that 5:45 p.m. class.
