What I’ve Been Eating Wednesday

Happy Wednesday!

Zoey is feeling a lot better today. I couldn’t get her to eat or drink anything last night but she woke me up at 4:30 a.m. crying because she was hungry and needed to go outside. She’s moving around and getting back to her normal sweet self. She’s asking for lots of sympathy love and pats.

5.13zoeycone

She’s definitely not thrilled with the cone life.

I promise not to devote another post to golden retrievers but I had to give you a quick update. Here’s what I’ve been eating the last few days.

5.13wrap2

Cold wraps! I usually do hot pressed wraps but decided to switch it up and I’m loving it. This one is lite mayo, dijon, Applegate ham, tomatoes, romaine, provolone and avocado.

5.13wrap

And this one is a mayo mixed with lemon juice and herbs, avocado, Boar’s Head maple turkey, tomatoes, arugula and muenster cheese. I’ve been using these Rudi’s wraps. They hold up really well and don’t fall apart. Side note: I bought blackberries at the store on a whim yesterday and they are so big and sweet!

5.13lunchsalad

Love this salad with spinach, spring mix, turkey, strawberries, blackberries, avocado, toasted walnuts, dried cranberries and goat cheese.

5.13flatbreadpizza

Flat Out Wrap pizza with chicken sausage, mushrooms, spinach, sundried tomatoes, goat cheese and mozzarella. Topped with lots of basil. (Tutorial on how to make Flat Out Pizza’s in this post.)

5.13chicken

Pre-marinated chicken breast from a local butcher, sauteed zucchini and leftover feta potato salad.

And coming soon…a post about the crazies thing I have ever cooked. Hint: it lives in the sea! 🙂

Have a great day!

Breakfast + What I Bought at Trader Joe’s

Breakfast + What I Bought at Trader Joe’s

I am such a creature of habit when it comes to breakfast. 95% of the time I’m craving a breakfast that is on the sweet side. That mostly alternates between smoothies or yogurt bowls with overnight oats, chia pudding or oatmeal occasionally thrown in there. On the rare occasion I go savory – it’s scrambled [...]

Life Lately: Summer So Far

Life Lately: Summer So Far

I want to bottle up this summer and make it last forever (well, maybe minus the wildly hot and humid weather that makes running a big thumbs down). I mentioned this in my last post…but I am really enjoying the slower pace and the days that feel like they have more space. While I’m trying [...]

So Many Dinner Ideas

So Many Dinner Ideas

Happy Friday! I hope this post finds you well and enjoying the summer. We are in the dog days of it over here in Charlotte – the heat and humidity is off the charts – but it’s something I’ll embrace because I deeply appreciate the massive slow down that summer has brought. A lot of [...]

Happy weekend! Another week in the books! I got three runs in (6.5 miles, 5.5 miles, 5.5 miles) and I have a trail run planned for tomorrow. Total weekly mileage will end up around 30-35 miles depending on if I go for 13 or 17 tomorrow! I’m 16 weeks out from the Golden Ultra so [...]

Life Lately: 8 Years Old, A New Piercing, Trail Training and More

Happy Memorial Day Weekend. It’s a very rainy one here in Charlotte and while I am a little bummed not to be spending the weekend in Florida with the fam or by the pool at our swim club (just opened for the season!), I’m also welcoming a slower pace and time at home. It’s been [...]
