Hi and happy Wednesday!

I missed you guys yesterday because my day was jam-packed and ended with a fiasco of getting a bird out of my house and babies.

I was getting ready to meet a girlfriend for a walk and dinner and went into the kitchen to find Zoey going crazy. She had a bird cornered by the back door and at one point actually caught it and had the bird in her mouth. I have no idea how this poor bird got in the house but I rescued it from Zoey and it was flying wildly around my kitchen. I had to go get my neighbor to help me get it out (bird was unharmed). Quite the cleaning operation commenced after getting the bird out.

(If you’re wondering what Sullie was doing during all of this…nothing. Just laying in the other room watching the chaos. Ha!)

So an hour later than originally planned I met this handsome boy and his momma for a walk around uptown and dinner at Malabar. I got tons of baby playtime and snuggles in and then ended up going back to my friend’s house and keeping her company through bath time and bedtime because her husband is traveling for work. I didn’t get home until 10:30 and crashed.

It’s been a couple of weeks since I’ve done a recent eats post so today I have a selection of things I’ve been cooking and eating at home.

Loving fig season. Greek yogurt with honey, granola, figs, berries and almond butter.

8.12smoothie

Always smoothies. Lately it’s been frozen bananas, cherries, blueberries, strawberries, greek yogurt, cashew milk, Premier Protein Vanilla Milkshake Protein Powder, peanut butter and dark cocoa powder.

I have been craving eggs lately. I was training a client at the gym one morning and was like, “I must have eggs for breakfast.” I came home and made this yummy combo of eggs over avocado toast with a fresh peach. (Check out my post on no-fail egg cooking!)

Salads topped with berries, toasted pecans, deli turkey, avocado and feta.

The best salad I’ve made lately was spinach, avocado, roasted sweet potatoes, soft boiled eggs, avocado, dried cranberries, feta and sesame ginger dressing. The soft boiled egg was an accident…I was boiling eggs for my salad and didn’t cook them quite long enough because I was hungry and rushing. It was a good mistake!

I made my homemade pad thai recipe with zoodles. While it wasn’t bad, I’ll stick with the real thing when it comes to this recipe. The rice noodles just soak up the sauce so much better than the zoodles.

Barbecue chicken flat bread.

Baked tofu over quinoa with hummus. Kale chips on the side. (Check out my tofu baking tutorial in this post.)

Fajita turkey burgers topped with pepper jack cheese, roasted okra with feta and corn on the cob. First, I need to post this turkey burger ASAP because it’s amazing. Second, I whipped up a Sriracha aioli to top the burgers with and dip the okra in. Third, here’s my roasted okra with Srirach aioli recipe. I cut my okra a little differently this time to make them more a little more “fry-like” (although let’s get real…I wasn’t trying to call okra fries) versus serving them whole and I liked it!

I used the leftover tofu and quinoa to make quinoa bowls. One of my favorites! I layered quinoa, sauteed spinach, sundried tomatoes, avocado, tofu, feta and hummus in a bowl.

And finally…I picked up some bone-in pork chops from the farmers market and served them with a tomato mozzarella salad and pole beans. I made a white wine butter sauce for the pork chops. They were so good!
