Hey there. Hope it’s been a good weekend. I’ll have the weekend recap for you tomorrow but I got it together enough today to put together a meal plan for the week and do all the shopping. I’m excited about 0ur week of meals so I wanted to share the plan with you along with last week’s workouts since I don’t do either often anymore.
I got motivated to meal plan this week because I just started receiving Cooking Light again. You’ll find two recipes from recent issues in my meal plan in addition to some recipes from Epicurious (you know it’s my fave source), Serious Eats and Pinch of Yum.
This Week’s Meal Plan
Sunday
Grilled butterflied whole chicken with lemony potato salad and grilled okra
Monday
Coconut-lemongrass chicken noodle bowls
Tuesday
Grilled burgers with leftover potato salad and tomato and cucumber salad with peach dressing
Wednesday
Grilled halibut, baby bok choy and eggpplant with Korean barbecue sauce (I may use another firm white fish because halibut is so expensive!)
Thursday
Out – social stuff
Friday
Spicy fish taco bowls with cilantro lime slaw (except I’m going to sub sauteed shrimp for the fish)
