National Coffee Day + Recent (Easy) Eats

Hey there. Happy National Coffee Day. Is anyone taking advantage of the reduced price or free coffee deals today? I just made my normal french press at home this morning and will probably also have a Nespresso a little later. I finally got our capsules restocked so I’m enjoying having an espresso for a mid-afternoon treat.

I shared these two quotes on Instagram for my personal account and for Y2’s account which basically sum up my relationship with coffee. 😉

I thought I’d show you some recent eats today. They’ve been a bit all over the place. I tend to lose my appetite when stressed/anxious/sad so I’ve basically been eating whatever sounds good to me. There’s also been more out to eat food than usual due to travel and lack of desire to cook much.

Breakfast

Pumpkin Banana Egg White Oatmeal

Banana pumpkin egg white oatmeal. (This recipe, add canned pumpkin.)

Sweet Potato Breakfast Bowls with Scrambled Eggs

Sweet potato breakfast bowls with scrambled eggs. Topped with a drizzle of coconut milk, cashew butter and my dad’s granola…which is so delicious.

Here’s another sweet potato breakfast bowl but I used a white sweet potato. The verdict on that is that they’re a lot denser and gluier than their orange friends. I’ll stick to orange for breakfast bowls.

Paleo Banana Muffins

Finally, fresh fruit, scrambled eggs and a paleo banana muffin from the freezer with cashew butter.

Lunch

Dinner

Snapper and roasted vegetables

Leftover snapper in a garlic butter wine sauce that my dad cooked with lots of veggies on the side.

Chipotle Chicken Burrito Bowl

Chipotle on the road home from Florida. I had a chicken burrito bowl with brown rice, black beans and a heap of guacamole. It had been several years since I’d eaten at Chipotle and the verdict is that the food tasted really good and was a great value but it was really, really salty. Does anyone else get that with Chipotle?

Chicken Tagine

The first day we were home from Florida, Tanner’s mom and step-father spent the night with us. I decided to cook dinner for everyone and also invited his brother and sister-in-law. I was equal parts overwhelmed to have company and really, really grateful for the distraction. (And I totally shared this with them and they understood!) I spent the afternoon getting the house clean, which felt good, and then whipped up dinner. I made a Chicken Tangine with Apricots from Epicurious.

I served it over couscous with a salad on the side. After saying goodbye to everyone and cleaning the kitchen, I left Tanner up to hang out with his mom and I was in bed with a cupcake by 9:30 p.m.

Brio Salmon Salad

And finally, BFF Dorie is on a mission to get me out of the house. We went to Brio for dinner last night where I had a salmon salad with crispy potato strings and grilled asparagus. We’re having a girl’s night out tonight at her house. I’m bringing over a couple Blue Apron dinners that I haven’t cooked this week and we’re going to make a night of cooking and hanging out with a few friends. I have to say it again…my friends have gone above and beyond and I feel really grateful.

Are you more of an emotional eater or appetite-loser? I’m not even sure I can say that I totally lose my appetite but I definitely gravitate more towards simple things and all the carbs.
