I have so many readers, friends and yoga students who choose to follow plant-based diets. And while you guys know that I’m an “eat it all” kind of girl, I certainly try to incorporate meatless meals into my breakfast, lunch and dinner rotation and have become so much more mindful over the years about where my meat comes from when I do purchase it.

I was recently invited to sample four weeks of meals from Purple Carrot. It’s a meal delivery service that allows you to cook delicious plant-based meals at home. Purple Carrot ships you all the healthy ingredients and recipes that you need to create meals using only whole food plant-based ingredients. I said “YES” because this was offered to me during the busy holiday season and I knew that I would welcome some clean, plant-based meals during a typically indulgent time of year. Plus, I knew that my veggie friends would benefit from the review. 🙂

Purple Carrot Review

It was a good month of meals.

I knew I was going to love Purple Carrot when this Tofu Bahn Mi came to me in the first week of meals. I can safely say this is a recipe that I will recreate over and over at home on my own. It was seriously amazing and so satisfying.

I also particularly enjoyed this barley lentil salad that was paired with the most perfect mint vinaigrette. I loved this one for a flavorful plant-based lunch option.

Cajun-spiced tofu from Purple Carrot

I appreciated that Purple Carrot sent a variety of protein options and didn’t just rely on tofu. I think I only received two recipes including tofu. I also received meals like a vegetable pot pie with a biscuit crust and butternut and black bean enchiladas.

But this cajun baked tofu with braised collards and creamy grits was to die for. Tanner went crazy over this one. I think he was surprised that he liked it so much.

You roasted tofu in a cajun spice mix while you braised collards, carrots and onions on the stove top.

It was all served up over creamy grits. It’s the opinion of this Georgia girl that you can never go wrong when you serve things over grits.

Like most meal delivery services, Purple Carrot brings a recyclable box to your door that is filled with everything you need to make your selected meals for the week. Everything is pre-measured and portioned out so there is no food waste. Your box includes meal cards which are super straightforward and easy to follow.

One of the things that I appreciate most about services like this are that they help me break out of food patterns and ruts and try new ingredients and combinations. This was a blood orange salad with toasted hazelnuts, fennel, radishes, roasted beets and a ginger miso dressing.

It was a new and tasty combo for me. The ginger miso dressing will be added to my homemade salad dressing rotation moving forward.

And the final dish I’ll share with you is this turmeric carrot soup. Y’all know I love a good carrot ginger soup and this one put such a delicious twist on my standby recipe. The first thing I loved about the recipe was that you roasted the carrots, sweet potatoes and onions before adding them to the soup. This added SO much flavor!

The second thing I loved was the addition of curry powder along with the turmeric to the soup. It was flavorful and a bit spicy. Just how I like my carrot ginger soup.

We got FOUR servings out of this soup! I served it alongside everything from the blood orange salad to avocado toast. Broken record…I can’t wait to make it again.

Benefits of plant-based diets.

So…let’s chat about some of the benefits of eating a plant-based diet.

Definitely a motivator to keep increasing the number of plant-based meals into my weekly rotation. So whether you choose to eat a strictly plant-based diet or are just looking to add more of them to your diet, I can’t recommend Purple Carrot enough. And I’m not supposed to say this but if you do have a staunch meat eater in your house, it’s quite simple to add a protein to many of the Purple Carrot meals so they can please everyone.

I know this won’t be a one and done thing for me because I truly enjoyed the month that I spent cooking Purple Carrot recipes. I can honestly say that I respect this brand and I think they’re doing something really amazing and important. I highly suggest following them on Facebook and Instagram. Their branding is great and their photography and information shared is wonderful as well.
