Happy Sunday! I hope it’s as beautiful for you as it is here in Charlotte. It’s 63 and sunny and I’m going to get myself outside after I finish this post.

One of my favorite Sunday activities is reading Joy the Baker’s “Let It Be Sunday” post where she compiles a weekly reading list of things from around the Internet. I just got sucked into the vortex of Mount Everest stories after reading, “Mount Everest is so crowded this year, there is a risk of traffic jams.” There will be around 800 climbers trying to summit in the handful of days with favorable conditions for it.

Reading that story led me to google other news stories about Everest and looking at pictures of the ascent and summit.

Call me crazy but this does not look like a fun activity and is not on my bucket list! I have read so much about Everest and watched movies/documentaries because I find it fascinating that people willingly and excitedly do this. It just all around sounds like a terrifying experience that does not pass my “risk versus reward” test. There is such a high risk for injury and loss of life. Also, I really hate being cold and the thought of spending weeks at base camp + the freezing cold ascent sounds miserable. Hot yoga problems…haha. Did you know that it also costs $40,000-$45,000!?

Okay, that was quite a tangent. Let’s talk about my workouts from last week…they were nothing compared to an Everest summit and very warm and sweaty! ๐Ÿ˜‰

Weekly Workout Recap

Monday: teach Y2 Strength, hot yoga (here is the workout that I taught)

Tuesday: teach Y2 Strength, hot yoga

Wednesday: teach Y2 Strength, hot yoga

Thursday: teach Y2 Strength, hot yoga

Friday: hot yoga

Saturday: hot yoga

Sunday: run (hopefully 4-5 miles), hot yoga

As I mentioned earlier this week, I’m doing a 4-week test of a new strength training format at the studio. It’s a 45-minute class that uses bodyweight, bands and dumbbells for a total body strength workout. For the 4-week test, we are only offering 4 classes each week with 10-12 spots per class and I am teaching all of them. If the test goes well, I’ll add more classes to the schedule and train a few other teachers to teach it. So far so good! ๐Ÿ™‚

I also mentioned earlier this week that I’m participating in our studio’s 30 day Hot Asana Challenge in May. It’s been a long time since I’ve practiced daily (mostly due to lack of time and fitting in other workouts, I so wish that I could) so I’m excited to see how I feel at the end of the 30 days!

This Week’s Dinner Menu

I spent some time this morning putting together a meal plan for the week. Here’s what we’re working with.

Sunday: Braised chicken with asparagus, peas and leeks with herb roasted potatoes

Monday: Thai sweet potato noodle bowls with tofu

Tuesday: Sesame crusted yellowfin tuna sushi bowls

Wednesday: Ancho chile and cinnamon brined pork chops with pan-fried plantains and spicy braised collards

Thursday: PaleOMG pizza spaghetti pie made with chicken Italian sausage + add some extra veggies

Friday-Sunday: Florida visiting my family

I’m making the pizza spaghetti pie on Thursday so that Tanner will have some leftovers to eat while I’m gone. Sometimes I’m sweet like that. ๐Ÿ˜›
