Like I mentioned in yesterday’s post, I spent all weekend in prenatal yoga teacher training. I am going to dedicate an entire post to it later this week (so much to share!) but here is what my weekend looked like outside of training along with a recap of last week’s workouts (including an awesome 30-minute treadmill endurance workout) and a new workout playlist for you!

Weekend

I haven’t been running much at all lately but I squeezed in a quick four miles on Friday afternoon and it felt great!

You might remember from my Friday post that we were dog sitting Stella for the day. She loves the big girls. I was cracking up when I caught her so velcro attached to Zoey that she was relaxing on her tail. We said goodby to Stella around 4 p.m. We can’t wait until she comes back to play! 🙂

chopt salad

My training was 5:30 until about 9 p.m. on Friday night. I picked up a salad from CHOPT on my way home. I built my own salad but didn’t want to pay $0.79 for each additional topping after 4 so I came home and dumped it all in a mixing bowl and added nuts, dried cranberries and feta to my salad. It was so massively huge that it ended up feeding me again the next night.

I was up bright and early on Saturday to make it to training by 8 a.m. I had two eggs cooked in coconut oil along with blueberries and buttered sourdough toast.

zoes chicken salad and fruit plate

We broke for lunch shortly after noon. I went to Zoes and ordered a chicken salad and fruit plate.

The rest of the afternoon was spent in training and then I stopped by Trader Joe’s for a big shopping trip on the way home. I blogged about what I bought in last night’s post so check it out if you missed it.

After sitting like a blob for an hour or so, I got dressed to attend a party to celebrate a friend who was getting married the next day. Two of my favorite ladies were there along with TONS of other people that I hadn’t seen in forever. The mix of people in attendance was a little crazy and I definitely had to fight my social anxiety demons when we first arrived. I ended up having a great time. We only stayed for about an hour and a half since I’d had a long day and had another one in front of me.

We watched an episode of House of Cards back at home and I ate the rest of my Chopt salad. Usually leftover salads aren’t my thing but this one was great because it was a mix of sturdier lettuces like romaine and kale and it was super lightly dressed. This go around I also added avocado and some leftover tahini turmeric dressing. I also snacked on a bunch of Late July Chia & Quinoa chips. They’re my fave.

smoothie bowl

Sunday morning called for a smoothie bowl before heading back to training at 8 a.m. It was 30 minutes away so the mornings were early and the days were long!

whole foods hot and salad bar bowl

I went to Whole Foods for lunch with the group. I think I made my favorite bowl ever. I started with a base of kale salad and then topped it with quinoa, lime cilantro tofu, harissa roasted carrots, roasted zucchini and squash, grilled eggplant, grilled peppers, grilled tomatoes, a grilled portobello mushroom cap, almonds and basil. SO GOOD!

whole foods cookies

I loved our afternoon discussion to wrap up the training. Cookies and kombucha to power me through!

After a long weekend of sitting, I was itching to MOVE! I stopped by the Y on my way home for a quick workout. Keep reading below for details on my workout. I wrapped up the weekend cooking dinner and telling Tanner all about what I learned at my training.

Last Week’s Workouts

Monday: hot yoga, teach Y2 strength

Tuesday: teach Y2 strength, hot yoga

Wednesday: teach Y2 strength

Thursday: 3 mile walk, teach Y2 strength

Friday: 4 mile run

Saturday: REST

Sunday: 4 mile treadmill intervals + squats and pull ups

A 30-minute treadmill workout focusing on longer hill and speed intervals.

This was a great little treadmill workout with more of a focus on longer endurance intervals rather than short intervals.

For the squats and pull ups, I just did 5 rounds of 10 back squats and 5 strict pull ups.

Weekly Workout Playlist

Here are some tunes for you to sweat to this week. Enjoy!

Here’s the direct link to Spotify.

Okay, that wraps it all up! Go try that treadmill workout!

What did your weekend activities include?

Salad/hot bar meals…do you like keeping them classic/basic or getting crazy with your combinations?

Potato and Broccoli Cheddar Soup

Potato and Broccoli Cheddar Soup

This potato and broccoli cheddar soup is a warm hug in a bowl. It’s a mash up of potato soup meets broccoli cheddar soup, and makes for a creamy, hearty and cheesy bowl that has just enough broccoli in it to make you feel like you’re getting your veggies in for a complete meal. POTATO [...]
