Hey guys! I’m enjoying a long weekend in Florida with my family. My mom and I spent the afternoon on the beach and I just came in to get showered and cool off. It’s gorgeous but hot! The plan tonight is a fajita dinner and then my grandmother and I are having an epic Scrabble rematch after she beat me last night while we watch the Emmy’s. Fun fact about my grandmother…she LOVES watching awards shows to check out what everyone is wearing. We’re watching the red carpet coverage on E! right now. 🙂

It’s been a while since I posted a week of workouts so I thought I’d share what last week’s looked like since I’m gearing up for the Charlotte Half Marathon and hopefully the Kiawah Half as well. I’ve definitely decided I’m a no-go on the Kiawah Full. I’m totally in the camp of half the distance, twice the fun this season!

LAST WEEK’S WORKOUTS

Monday: 4.75 mile run at 8:30 pace + teach Y2 Strength

Tuesday: 60 mins hot yoga

Wednesday: 3.5 mile run at 8:34

Thursday: 3 mile walk

Friday: 5 mile run at 9:00 pace

Saturday: 3.1 miles of treadmill intervals, mostly sprints + glutes + back strength training

Sunday: 5 mile run at 9:15 pace

I ended up at 21 miles for the week! No long run this week but I’ll get back to it next week. I’ve done 8 a few times so I’ll shoot for 9-10 next week. I’m VERY casually training for these races!

Here are details on my Saturday strength workout. I shared it on Instagram.

THIS WEEK’S DINNER MENU

Monday: herb-crusted cauliflower steaks with beans and tomatoes (meatless Monday!)

Tuesday: superfood coconut curry salmon salad

Wednesday: sweet and sour bok choy with pork stir fry (I will probably serve this with rice)

Thursday: creamy hummus with spiced ground beef (I’ll serve this with some roasted veggies and pita bread)

Friday: leftovers or Postmates

Saturday: out with friends or date night

Sunday: dinner at Tanner’s mom’s house

Off to go eat some fajitas! 🙂

What’s on your meal plan for the week ahead?

What workout has been feeling best for you lately?

Moab Run The Rocks Race Recap (3 Day Stage Race)

I cannot believe it’s been nearly a month since I completed Moab Run The Rocks! It’s a three-day stage race in Moab, Utah that’s put on by the same race organization, TransRockies Rockies Race Series, that I did my six-day Colorado race with back in August. TransRockies truly excels when it comes to planning and [...]

Potato and Broccoli Cheddar Soup

Potato and Broccoli Cheddar Soup

This potato and broccoli cheddar soup is a warm hug in a bowl. It’s a mash up of potato soup meets broccoli cheddar soup, and makes for a creamy, hearty and cheesy bowl that has just enough broccoli in it to make you feel like you’re getting your veggies in for a complete meal. POTATO [...]
