Friday Things + What I Ate This Week

It’s a warm, gray and rainy day here in Charlotte but a three-day break from freezing temperatures has been nice. It’s supposed to get cold again tomorrow! I feel like it’s been forever since I’ve posted a picture of the girls so I thought you might like one for a little Friday smile. They’re sweet as ever! 🙂

Last night I spoke on a panel about blogging that was hosted by Charlotte Lately. On the panel we had a branding expert, a photographer, a tech guru, an accountant and two bloggers – myself and Katie from Mumus and Macaroons, who is lovely. We spoke to 50 bloggers about everything from Instagram algorithms to content generation to SEO techniques and much, much more. I am an open book when it comes to sharing professional knowledge, whether it be fitness industry insider tips or blogging-related topics so please feel free to pick my brain any time!

Okay, before I go teach yoga at 9:30, I’ll show you what I’ve been eating this week.

BREAKFAST

I’ve had this same smoothie bowl every day this week. It’s just a mix of spinach, banana, raspberries, cherries, blueberries, strawberries, plain greek yogurt, two dates, peanut butter and almond milk. Super simple.

Oh also, I’ve been using frozen chopped organic spinach in my smoothies lately, which I love. First, it’s awesome to have all the ingredients be frozen so that you get a nice texture. Second, it’s nice not to have to worry about “spinach slime.” You know what I mean?

LUNCH

I bought this chopped salad mix at Trader Joe’s that had cauliflower, kale, brussel sprouts and a few other things in it. I also mixed in pears, cashews, avocado, beets, dried cranberries and feta.

And for the dressing, a mix of homemade honey dijon balsamic and some sort of Asian-y dressing that came in the salad kit.

I did a decent job on getting back to salads this week! This was arugula, beets, feta, avocado, apples, cashews and dried cranberries with an Amelie’s croissant on the side.

Lastly, basmati rice, arugula, avocado, feta, srircha hummus and a fried egg. I love making rice bowls out of leftover rice!

DINNER

Be prepared to be underwhelmed by my dinners this week. I have been losing motivation as the day goes on and by dinnertime I want whatever is simple and comforting. This was a bowl of leftovers from the roast chicken dinner I did on Saturday night that I topped with a drizzle of barbecue sauce.

I did get it together and actually cook on Monday night. Chana masala over steamed rice. This is one of my favorite easy to make at home Indian dishes.

I sauteed ground turkey and then added in a bag of Trader Joe's cauliflower rice stir fry and at the end scrambled two eggs into the mix. Sriracha on top.

Okay, I know this doesn’t look like much but it was super simple, delicious and packed with veggies and protein. Dinner with Dorie and another close girlfriend at Foxcroft Wine Co. after speaking on the panel last night. We shared brussels sprouts, truffle fries and sliders. YUM.

I’ve mentioned Amelie’s a few times in this post. Well, I met a doula there on Wednesday for an interview (loved her) and had to come home with some treats!

Not sure if I’m doing you a favor by telling you how amazingly delicious and addictive this dip is. We finished it off in two days. Consider yourself warned! 🙂

And finally, this is not an uncommon late night occurrence for me. Sometimes baby boy just needs a little snack before bed. 😉
