Weekend: Biscuit Love + New Books

Is it sad if the highlight of my weekend was biscuits?

I’m only partially joking. These are the flaky biscuits from Immaculate Baking. I get them at Whole Foods and they are organic and have no bleached flour, no artificial flavors, no hydrogenated oils and no preservatives. When it comes to canned biscuits, this is about as good as it gets guys. Just look at those flaky layers!

I served them with dinner on Friday night and had a second for “dessert” with some preserves. It was so good I had to repeat the “dessert” again on Saturday night!

Okay, other things from the weekend (you’ll see the biscuits again).

On Friday I finally felt good for my first run in over a week. Thank god for those antibiotics. All the snow was melting but it was still fun to see the remnants in people’s yards.

Friday night dinner spread. For the salad I mixed together chopped lacinto kale with two other chopped salad mixes from Trader Joe’s and then massaged it with olive oil, lemon juice and sea salt and set out toppings. The chili was black bean, butternut squash and ground turkey and really good. I made it up as I went but it’s shareable for sure. And a biscuit! 🙂

Saturday morning started off with a smoothie bowl.

And then a long walk with the girls. The weather was absolutely gorgeous. We covered about 3.5 miles.

Saturday lunch after teaching was the massaged greens based topped with a Trader Joe’s grain blend that I cooked the night before to have on hand in the fridge. Also…hardboiled egg, cashews, apples, feta, avocado and dried cranberries.

I was in teacher training from 2-6 p.m. and then swung by Barnes and Noble on the way home to pick up a couple new books. I got The Storyteller and The Secrets She Keeps.

Dinner was Postmates from Yama. I ate the cooked stuff…both the sushi rolls had tempura shrimp and I ate the calamari. Entertainment for the evening was catching up on This Is Us.

Sunday morning started with a brunch of scrambled eggs, bacon, grapefruit and the last of the biscuits. I was sad to see them go. I’ll definitely be picking up another can next time I’m at Whole Foods!

Next up was a seven-hour stretch of teaching yoga. I taught prenatal and then had teacher training from 1:30-6p. We did an hour of the training outside because the weather was so nice.

Needless to say, I was drained after that day. I had leftover chili for dinner and was in bed early to read The Secrets She Keeps. I stayed up until almost 12:30 a.m. reading it! Definitely sucked me right in.

I mostly took today (Monday) off of work to catch up on life stuff since I worked so much over the weekend. Hope y’all had a good one!

Favorite biscuit brand? Canned? Frozen? Or favorite biscuit recipe? This might become a new pregnancy craving.
