I hope you’re enjoying a cozy Sunday. It’s a rainy day here and perfect for spending a day around the house catching up on work, house organization and baby nursery stuff. <3
I am meeting Dorie for a yoga class in a bit but other than that, I’m excited to have a full day with nothing on the schedule. No teaching today!
The cold and flu season we are having is so terrible this year and I’m grateful to finally be feeling like myself again. I’m sending lots of love and get well wishes to any of you who are under the weather right now. I know how brutal it is.
I have so enjoyed feeling energetic and being active again. I’ve been taking tons of walks with these two and back to working out regularly.
I’ve also been balancing the activity with rest and relaxation. I have found a lot of peace and space in slowing my pace a little. I’ve been taking baths, reading a ton and watching Pretty Little Liars and The Crown on Netflix. I’ve also stopped setting an alarm in the mornings and find that I naturally wake up between 7 and 7:45 which is perfect given that I usually read until about 11 or midnight. I’m hitting that 8 hours!
Sullie approves of sleep and R&R! ๐
Okay, time for some recent eats.
BREAKFAST
Nothing new here. It’s either been smoothie bowls or oatmeal. The thought of eggs in the morning has been stomach-turning but I can eat them later in the day.
Banana cottage cheese oatmeal with peanut butter.
LUNCH
I’ve definitely been craving sandwiches. This is sourdough with mayo, mustard, tomato, muenster, ham, turkey and avocado.
The sandwich love is REAL. This one on a bagel was extra amazing.
And another on sprouted wheat.
Not a sandwich but close. ๐ Avocado toast with mayo, sea salt, a hardboiled egg and truffle seed salt. A pear on the side.
I did eat a salad one day for lunch. Woo. Massaged greens, cous cous, hardboiled egg, avocado, cashews, dried cranberries, apples, feta and some sort of Trader Joe’s dressing that came in a salad kit.
DINNER
Brace yourselves. More carbs coming. Haha.
I tried the Trader Joe’s cauliflower crust pizza.
I received SO many questions about it on after I posted it to my Instagram stories. Here’s my take. It’s definitely not like the “real” thing. The crust did get crispy but the layer between the bottom or the crust and the cheese was kind of mushy/gooey. Overall the flavor was pretty good and if you’re GF it’s worth a try.
It was good enough that I ate it for dinner two nights in a row. I did also add some salami slices to the top before baking. I didn’t have any pepperoni so it was a good substitute.
The next two nights I ate this awesome combo of a cous cous/brussels sprouts dish that I created on the spot and topped it with baked brown sugar dijon salmon. This dinner was actually blog-worthy and I need to do it again and photograph it in the daylight. SOON!
And then it was back to pizza. I grabbed dinner at Brixx with Dorie and Virginia on Friday night and then we caught a movie after.
I did eat a salad before the pizza. ๐
I don’t even know how to explain how my food preferences have shifted with pregnancy. I’m still enjoying vegetables and salads but when it comes down to it, I feel like I “need” a little more oomph with my meals. I’ve never wanted so much oatmeal, bread, grains, etc in my life!
ETC
Virginia brought me this box of treats from Amelie’s. This girl knows me. I mean, how could she not after our epic foodie and fitness tour of NYC a couple summers ago? (So excited to go back this week!)
Oh and I baked myself a carrot cake on Friday night. I’ll be posting the recipe soon!
Today is my dad’s birthday and he loves carrot cake so let’s just say I did it in celebration of him! ๐
Happy birthday dad! Thanks for giving me my love of cooking, baking and goldens! LOVE YOU!!!!!!!!!
Have a good day guys.
What is your take on the cauliflower crust pizza? Have you tried it? What brands do you like?ย
What’s your favorite rainy day activity?ย
Favorite bath accessories/salts/soaks/pillows/etc? I think this might become a “thing” for me in the end of pregnancy!ย
