I’ve done a better job with eating some vegetables since my last recent eats post. Definitely not because it’s what I’m craving but at least I’ve gotten them down.

I like to attribute this change in appetite preferences to the graphic above (isn’t it crazy!?). When you’re pregnant your intestines and stomach get smushed way up into the top of your belly as baby gets bigger. Needless to say, digestion slows down and things get a little tight in there. I’ve just been leaning towards foods that seem simple and easier to digest.
BREAKFAST
Smoothies every day. I haven’t wanted oatmeal in several weeks. I mostly just wake up wanting something cold and lighter.
Brunch of a fried egg, bacon, freshly baked sourdough with jam and grapefruit.
LUNCH
Last week I prepped a greens + quinoa salad. I used a bag of Trader Joe’s Cruciferous Crunch and their Tahini, Apricot and Pepita Slaw Kit minus the apricots and the dressing. I massaged the greens with olive oil, salt and lemon juice and then tossed them with the cooked quinoa. To that I added pepitas and cashews as well as a good pour of Tessamae’s Zesty Ranch dressing.
For serving I added avocado and feta on this day.
Same salad mix but with avocado, feta, beets and Tessamae’s Creamy Ranch.
Same salad but with avocado toast.
Open faced sandwich on sourdough with mayo, spicy mustard, avocado, turkey and cheddar with an apple on the side.
DINNER
I ate the meatloaf, mac and cheese, mashed potatoes and corn my friend brought last week FOUR TIMES for dinner. Cooking is not my favorite thing to do right now so opening the fridge and warming up leftovers is pretty amazing.
Ground turkey with two scrambled eggs and Trader Joe’s Riced Cauliflower Stir Fry for a take on fried rice. Sriracha on top.
Rotisserie chicken, rice cooked with coconut oil, lime juice and lime zest, green beans and roasted sweet potatoes.
Chicken and rice leftovers topped with a mix of Viva Chicken sauces that I had in the fridge leftover from the week before. Their sauces are the best.

One of my friends baked me a king cake last week and I ate a whole lot of it. It was like having a never ending cinnamon roll at my disposal and pretty awesome. She used this recipe from Joy the Baker.
New winter flavor of GT’S Kombucha. It was good to try once but I won’t get it again. It was very orange-y.
And that’s all for today. I’m off to make some sort of bread creation/sandwich for lunch.
