A Beautiful Run + Lots of Eats

Hello, hello! I just got back from a glorious 6.5 mile run. It was 65 degrees, sunny and low humidity. Oh and FLAT! My elevation gain was 58 feet and that’s only because I ran up a bridge. Gotta love Florida running. This kind of weather makes me feel like I want to run forever.

My run was also sans running stroller so that was extra amazing. I took advantage of my last morning in Florida and had my mom and grandmother stay with Finn during his morning nap. I returned an hour later to find that he’s still sleeping! I’m very grateful that he is starting the day with a solid nap. This means he’ll be a much more amenable travel companion later today. 🙂

We’ve had a great extra long weekend with my family and I’ll have more photos to share tomorrow when we’re back in Charlotte. For today, lots of good food for ya!

BREAKFAST

Kodiack Cakes with Toppings

We’ll start with this morning’s breakfast creation. It was something different for me but really tasty. A Kodiack cake (made with milk and an egg) topped with peanut butter, banana, plain yogurt, granola and strawberries. This combo was one that I will repeat!

LUNCH

Egg salad sandwich

Egg salad avocado, tomato and cheese on wheat. The egg salad was just two hardboiled eggs mashed with some mayo and salt.

Mixed greens tossed with my honey dijon balsamic vinaigrette and topped with chopped hardboiled egg, havarti, avocado, chickpeas, pecans and dried cranberries.

DINNER

Some great dinner ideas for you today!

Lemon parmesan panko crusted chicken breast

Lemon parmesan panko crusted chicken breasts topped with a little marinara sauce. Steamed green beans and couscous on the side.

Same thing, add some leftover kabocha squash.

Grilled cheese made with sourdough, two kinds of cheese, avocado and apricot preserves. Pressed in a cast iron skillet and cooked with butter. Leftover roasted brussels sprouts on the side.

Panera You Pick Two

Finally, Panera takeout. Fuji apple chicken salad, broccoli cheddar soup and a baguette that I ate with butter.

DESSERT

ALL THE ICE CREAM. I ate two pints at home last week and then got started on this one in Florida. For the record…I don’t think the Greenwise cookies and cream is as good as the conventional Publix store brand.

Okay, baby is awake and I need a shower and lunch! See you back tomorrow.

    Love a good turkey sandwich! Lately I’ve been having taco salad, pork loin, and my version of a turkey sandwich as a salad: lettuce, turkey meat, cottage cheese, tomatoes, mustard and pepper.

    I love Blue Bell cookies and cream but I haven’t had it in years. My husband and I are really into Ben and Jerry’s and I don’t think they make a basic cookies and cream!

    My usual lunch lately has been a kale salad, actually inspired from a recipe you posted once (I think). Baby kale + roasted chickpeas + pumpkin seeds + quinoa + balsamic vinaigrette. Very yummy and packed with protein! My other go-to lunch is soup and Triscuits.

    Long time reader / admirer! Was wondering if you could talk a bit about your feelings toward dairy these days? (Apologies if you’ve covered it recently.) I think you, like me, have gone back and forth over the years between loving it and reducing it in your diet—just curious if you have any thoughts about how your body is handling it these days (or not)! As always, thanks for being here and posting such delicious eats 🙂

    I LOVE the Publix cookies and cream (the regular one, not the Greenwise one). I’m also loving all their seasonal flavors lately. The S’mores one is amazing!

    Hi! For me, lunches have been a veggie burger over a salad. Quick and easy to eat while chasing a baby!

    If you like cookies and cream, you HAVE to try graeters (it’s based out of Ohio but some stores across the US carry it now!). There’s basically whole Oreos in there and it is the best ice cream ever. While you’re at it you should also try some of their ‘chip’ flavors – the hunks of chocolate are amazing.
